Mosaic IPAMosaic IPA
Notes: The deep golden/light amber color of this IPA comes from the use of a blend of English Maris Otter and American pale base malts. Sparing use of English crystal malt lends some caramel sweetness to help balance the hefty bitterness. Heady aromas of blueberry, pine, citrus and tropical fruit are the result of blending Mosaic hops with several other delicious American hop varieties. For being a large, hoppy beer it is quite drinkable, in part due to the balancing act of alcohol, malt complexity, and enormous American hop character.

Notes from 5/7/2020.
Poured from a 12oz can into a Rastal nucleated Teku glass and a Spiegelau IPA glass.
The body is copper with 2 fingers of white head in a Teku glass and 4 fingers of head in a Spiegelau IPA glass. Retention is somewhat above normal leaving a decent cap in a Teku, and there's great head retention in a Spiegelau with a moderate amount of thick lace all the way down the glass.
The intensity of aroma is medium. There are notes of peach, mango, and light pine.
The intensity of taste is medium-high. The flavor has hints of mango, peach, sweet malt, and pine. The front and mid palate seem short compared to the huge uplifting bitter finish.
The thickness is slightly above medium. It's somewhat creamy, dry, and has a medium level of astringency. The carbonation in the Teku glass is medium-low and more pronounced than most IPAs. In this case, the extra carbonation helps balance the huge bitter finish.
Overall, it's more dry and bitter than most American IPAs. It's very good but I prefer more balance in a Mosaic IPA. When it comes to local IPAs that focus on Mosaic hops, I rather have a Yellow Rose by Lone Pint.

L- Golden amber in color with a nice decent white rocky head that lingers with the beer. Solid appearance.
S- Piney hop, earthy, floral hop, biscuit cracker aroma, boozeyness with a little bit of skunkiness.
T- Sweet, bitter and flavorful. Earthy notes, stone fruit and piney hops follow. There is no boozeyness in relation to the high alcohol content. Incredibly smooth and drinkable. Dangerous...
F- Medium bodied mouthfeel. A bit chewy.
O- A very, very well made IPA. Dangerously smooth and drinkable with the alcohol content it has. Great flavor and solid mouthfeel. A true go to beer around the DFW area. Will always seek this one out.

A-Copper. Literally the color of copper with a great white head that disappears to a thin line of head but lots of lacing on the glass.

S-Floral Sweet and Resin hit the nose first with maybe a touch of a rubbery smell.

T-EXACTLY what a Mosaic should taste like. Light bitter fruity and smooth with those mosaic hops standing out. If you have ever had a muscadine grape, that flavor is in there somewhere toward the end.

F- With other mosaic high abv ipa’s I’ve found they hide the bitterness up front and it lingers around in the mouth afterwards. This doesn’t linger on the tongue with bitterness like others but coats the mouth in a good way. Medium carbonation.

Overall- This is one of my all time favorite IPA’s of all time. Has been for years. Their are better ones in their own right but this is always a go to choice when I just can’t make my mind up. This brewery is doing things right!

Pours deep amber with a rocky eggshell head. Big floral, citrusy, blueberry hop notes in the aroma. Juicy hops mix with cookie dough and a bit of alcohol zip in the first sip. More alcohol heat halfway down the glass. Light carbonation and medium bodied mouthfeel. Moderate bitterness, more juicy hops and booze in the finish.

A nice IPA, the high ABV doesn’t distract from the hops, but others of the same strength conceal it better.

A: A beautiful orangeish.
S: Sweet and hoppy with some fruitiness.
T: Hoppy but balanced by boozy sweetness and fruitiness.
M: Nothing outstanding, which is fine.
O: I like how its 85 IBUs, which can make it taste like a typical overwhelming bitter IPA, is balanced by the boozy sweetness and citrus.

Very drinkable considering its 8.6% ABV and 85 IBUs.

Enjoyed at home with family on 9/14/19.

Dark orange hazy color with a nice head and good lacing. Smells of hops and fruit. Nice and creamy mouthfeel with moderate carbonation. Nice malty character up front with a fruity vibe, and a good hop background. Not as complex as some better IPA’s, but still a very good choice.

i've had this one every-which-way. tonight? can to glass.

A: lucky-penny: bronze/copper clear with a white foamy head of low retention that settles into a monk-cap
S: hoppy piney bitter, caramel/biscuit malt, lemon/citrus sweetness
T: follows the nose + extra mellow points for such a high abv.
F: medium body, medium carbonation, slightest coating of the tongue

Overall: benchmark achievement. one of the most balanced straight-up IPAs that I've found, and hits the balance between malt and hop beautifully.

Poured into a nonic pint glass, the appearance was a ruddy semi-dark orange to amber color. Small white foamy head slid off at a fair pace. Some sly lace.
The aroma had some grassy to lemony character up front throwing themselves against a stiff caramel/toffee malt.
The flavor seemed to lean towards a rich malty sweetness then bringing in a slight damp bitter clingy hoppiness. Mellow aftertaste of lemon, grassy hops, caramel malts and a damp bitter character.
The mouthfeel was about medium bodied with a decent sessionability. Carbonation felt appropriate. Decent enough grip yet smooth. Mild grassy to lemony finish.
Overall, good for what it is, perhaps again. ABV seemed on par.

Pint glass in Dallas on draft. Dark amber. Very hoppy but not overly bitter. Caramel and kind of oaky. The ABV is well hidden and it doesn't have the sweetness that so many higher ABV beers have. Makes me wonder if this is the Oaked Mosaic IPA instead of the regular Mosaic IPA but the bartender didn't know. So hopefully I'm reviewing the right beer. Either way, I really like this.

Extremely well-crafted IPA, bordering on the DIPA side at 8.6%abv, although very drinkable. Hoppy, piney, smooth mouthfeei, there isn't a single negative here!! Well-done Community!!!

Good looking orange-amber IPA, clean with a slight chill haze to begin...1" dense off-white head. Good retention. Hanging at 1/4" after several minutes. Thick lace clinging as it recedes.
Blueberry, citrus, lemon peel over a hefty caramel malt backbone.
Leafy hops, berry flavor and citrus oil. Full malt backing.
Bright entry and mouthfeel, medium carbonation. Pleasant lingering bitterness with a mild, weedy, and dank finish.
Comes on like a Sierra Nevada IPA in some aspects of the color, aroma, mouthfeel...all good.
This one is right on....will keep it on my radar.

Appearance:
Copper, clear. Medium-fast rising bubbles. Thick rocky head. Good head retention. Leaves a pretty good lacing behind.

Aroma:
Tropical, mango, passion fruit, some citrus, sweet caramel malts, bready, hint of alcohol.

Taste/Finish/Body:
Hop bitterness up front, but not too overpowering, tropical, mango, passion fruit, some grapefruity. Solid malt backbone, candy like caramel, bready. Finish is bitter-sweet, lingers fairly long. Medium towards full bodied, semi-juicy, smooth, slight alcohol burn, low-medium carbonation.

Overall:
Very enjoyable!

12oz bottle served in a snifter. Bottled on 12/12/18, so a bit beyond what I would consider kosher for an IPA. If I thought it was stale, I wouldn't have posted the review...

Pours a ruby amber with a medium head, moderate to low carbonation. Smell is darkly fruity, but overall fairly mild.

Taste is dark fruit, strong bitterness, but also fairly mild.

Mouthfeel is medium, and nicely effervescent. Overall, it's good -- I think it would be better fresher. I just think the flavors would pop a bit more. I don't think it's stale, or bad...just a bit faded, maybe.

Appearance – The beer pours a lightly hazed golden amber color with a one finger head of white foam. The head fades rather fast to leave a trace of foamy lace on the sides of the glass.
Smell – The aroma of the brew is strongest of a pine and caramel smell along with some light tropical fruits smell mixed. Along with these aromas comes some notes of orange and a little bit of hay.
Taste – The taste begins with a rather doughy and bready taste that has a good deal of caramel and some grapefruit hop. As the taste advances the grapefruit gets a bit stronger in taste and is joined by some pine hop and light tropical fruit flavors. At the end a hint of warmth from the alcohol hits the tongue, leaving one with a decently hoppy and somewhat more malty taste to linger on the tongue.
Mouthfeel – The body of the brew is average to a tad bit on the thicker side with a carbonation level that is average as well. Rather fitting for the mix of bready/doughy/sweet and hoppy and it makes for a rather easy sipping brew.
Overall – A pretty good IPA overall. It’s a little more malty and moderately hopped, but yet still maintains a a rather easy drinking feel even at 8.6 % abv.

This is without a doubt, my favorite single IPA.

The aroma is just nothing but pure, unadulterated mosaic hops. I love it.

Flavor wise, the mosaic hops are extremely juicy, with a strong fruit flavor. There is also a nice floral backing, that isn't overpowering or too forward. It is mildly bitter, but extremely flavorful, and has a nice malt backbone to keep it drinkable.

Totally a surprise. At Banger's in Austin and server recommend it after asking for a strong ipa. Very happy and will be adding it to the regular rotation at home!

On tap at the Ginger Man (Midtown, Houston), served in a tulip glass. Hazy amber gold with a brief head of near white foam and streaky lace. Resinous pine, grapefruit rind and citrusy rosemary balance out caramel malt notes. Earthy tea and herbal bitterness close the dry finish. Medium body and moderate carbonation. A solid IPA, getting big and boozy, but still well balanced and drinkable.

OK this pours a deep amber, giving the appearance of an English IPA. Aroma is all malt, like an English IPA. Taste is caramelly/toffee-ish with a thick mouthfeel, like an English IPA. Alcoholic nose and taste. But the label says "American IPA". Label it American Strong Ale" or English IPA and I would believe it to be true to style. Plenty of hops bitterness, not much hops aroma. I seldom drain pour a decent beer, but this just wasn't what I was looking for. I like the hops-forward American-style IPAs and this ain't it. I won't rate it low because I don't think it's badly made, just not to my taste.

This one pours a golden amber color, with a small head, and lots of lacing.

This smells unfortunately way too malty, with caramel and too much crystal malt. I get only bitter pine on the nose, and none of the usual fruitiness that is typically attendant with Mosaic hops.

The taste is the same. It's basically a big malty IPA with astringent bitterness, and none of the complexities Mosaic hops can sometimes provide. This doesn't taste like it was made with a careful hand.

This is medium bodied, crisp and with a significant bite. The carbonation level feels normal.

I really was not impressed with this one. It was about 6 weeks old, so it's maybe a little old, but I don't have much faith in it being that much better at an earlier date.

Trying this at 54th street restaurant and drafthouse outside of Frisco. It poured a clear copper with white head that is leaving a spotty lace. The scent is tropical fruit. The taste was nicely balanced and easy to drink. The mouthfeel is lighter in body with good carbonation. Overall it's an excellent beer .

This gun is just a small notch blow hopslam in my book. I traded for this from Texas, if it was available locally it would always be in my fridge! A solid 4.0 or above in every category.

Very dark for an IPA compared to the norm. Color is similar to tea. Head is also a little darker than normal. The nose is THICK of hops as is the taste. The follow up taste is bitter but also finishes quickly like white pepper. I like the liberal carbonation.

Mosaic IPA (ABV 8.60%, IBU 85) is a locally brewed IPA I've had many times including yesterday. It might be the best IPA out of Dallas.

Look: amber hue with a half-inch off-white head

Aroma: it has a nice citrusy and piney aroma

Taste: It's a bit sweet and fruity, mango a tad of grapefruit, and then pine resin, well balanced.

Feel: it's light and crisp yet flavorful.

Look: Darker color than most IPAs. More of a amber color and almost opaque. 1 finger head that dissipated pretty fast.
Smell: The smell is great, the mosaic hops really come out to play in the aroma. A lot of citrus and citrus rind. Great smell.
Taste: Unfortunately, the taste does not follow the nose. I guess they used other hops other than mosaic. I was expecting a lot of mosaic hops in the flavor, but was disappointed on that front.
Feel: It has the dry feel that I look for in an IPA, but it was a little salty. The mouthfeel threw me off.
Overall: 3.56 or 71.25/100. Not a bad beer, a little different in a way that I didn't really like. I am willing to try it again, but I was let down.
