A French-style farmhouse beer brewed with chanterelle mushrooms we picked ourselves from the woods here in southern Illinois. It’s earthy with hints of apricot and funky mushrooms and a clean, malty finish.

Pours a hazy dark golden, smallish head, looks pretty carbonated. Smell is honeysuckle and cooked peppers, gain, earthy / umami.
Taste is pretty similar -- something gives it a slight spiciness, the sweetness and umami gives me a pepper vibe with maybe a little bit of funky yeast spiciness to move it a bit more in that direction.
Mouthfeel is on the thick and chewy side. Overall...this is a really interesting beer. It's good, but it's quite unusual, and I think I'll like it more as I adjust to it.

On draft at PapPo's Pizzeria. Poured a slightly cloudy, golden orange color with a small, off-white head of bubbly foam. It left minimal lacing. It smelled earthy with apricot, caramel and some spices. Earthy tasting (I guess that's the mushrooms) with fruity notes and a bready backbone.

Mostly clear orange body with a finger of white foam. Vinous mushroom with bready, white pepper, and wild sour apricot and nectarine notes in the nose. Taste adds many different accenting layers to what the nose lays out: earth, wood root, soggy leaves, and general citrus. Feel is bright for the style, starts wet and sour yet finishes dry with a refined wildness, earthy tones anchor the feel as it warms. Another unique and fun beer from scratch

I should caution that this beer had been aged for a year and a half in my cellar before drinking. Very hazy orange Amber color, smell is yeast, old wood and funk. Taste is yeast, earth and malt followed by a bit of apricot.

Pours into a stemmed glass a dull light to medium golden with a just a hint of orange hue,a half finger white head atop that settles pretty quickly.Earthy chantrelles and yeast spice in the nose,a bit of cork comes thru as well.Earthy /woodsy mushroom on the palate with yeast phenolic spiced notes all though not in your face,quite dry.A very food friendly and subtly complex beer with the chantrelles playing a nice role.
