another epic foresty earthy ancient tasting beer from scratch, man they never miss, and for how ambitious they all are, thats just insane! i believe this is 5% abv, not the listed 7.7% abv, perhaps it has changed from batch to batch, wouldnt surprise me at all really. i didnt expect this to be dark beer, its a translucent thin brown, with some red edges and a lazy layer of clearish bubbles on top, some sediment towards the bottom of the bottle, and a little haze working in as we get deeper into it. the cedar is immediately evident, pine and juniper character leaps out of the glass at me, with a sort of weird malt base, elements of oud bruin with the tartness thats there, but also some like english strong ale notes, long boiled malty concentration rather than specifically dark grain, quite interesting. some funk in nose and taste too, but not as sour as a lot of the scratch wild ones have been, and frankly its better. some red wine vinegar, fermenting fruit, and even a curious cola element. i have rarely loved their sour culture, but here it seems more tame, less weird, but equally intriguing to me, more refined maybe is a better way to say it, and there is more room for the funk, which loves the aromatic cedar here. faint cocoa, chemical or solvent or something odd, sherry, cedar closet, dry gin, musty basement, and sturdy rustic bread. its really interesting stuff, lighter than it looks, long flavor arc too, ive had a handful of beers in this sahti style now, but none quite like this. a standout for me from an insane weekend of beer drinking! these guys are one of the best in the business in my mind!

Poured from 750mL bottle into a funky tulip chalice glass.

Appearance: medium-dark brown with a little bit of haze and a thin layer of frothy tan foam atop. Not a bad-looking beer.

Smell: junipery and woody; there's some rich, dark malt underneath but mostly it smells like an earthy coniferous forest after a long, cold rain. I like it.

Taste: the flavor delivers what the smell promises, that I'll give you. To me, it is more balanced than the aroma. Plenty of earthy forest floor here, but it's very smooth and there's a nice piquant hit at the end. An interesting and enjoyable beer.

Mouthfeel: medium body with a huge and very well-integrated carbonation that generates a massive and satisfying creaminess. Outstanding!

Overall: Scratch is so out-there; they have definitely become one of my absolute favorite breweries, and it's because of beers like this Sahti. It's weird, super drinkable, and definitely like nothing else out there.

Dark amber with lasting foam and surface coverage for the entire glass.
Woodsy aroma, spruce tips and dry leaves, very rustic impression.
Malty with a light earthy bitterness, pleasant spruce note.
Medium bodied and very smooth. Drinkable and unique, a great interpretation of an obscure Finnish style.
