When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it's thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Slightly less than two fingers worth of late to develop fluffy bone white colored froth with a rocky top... Solid retention.... Color is a moderately hazed pale to medium gold.. A carbonated cyclone is seen in the center of tulip... Nose is simple and straight forward with notes of grass and hay at the forefront... The grass and hay are on the palate too but complimented by and array of other characters including honey and Belgian yeast... Dense and medium bodied and bursting with prickly carbonation... Sid and enjoyable saison but nothing too memorable or anything that will leave me yearning for another...

Pours a cloudy brassy golden color with visible carbonation. A large frothy head billows to the top and retains well. Nice lacing throughout.

The nose is fruity with some nice spices. Aromas of peach, pear, orange zest, and lime. Notes of cracker, grape, peppercorn, grass, honey and sweet floral spices.

Opens sweet with malty notes of graham cracker, bread and honey along with bright citrusy flavors. Zesty notes of orange jam, lime and lemon, pair with fruity notes of peach, pear and white grape. Notes of peppercorn, grass and a developing touch of bitterness add some balance.

Medium bodied with a mostly smooth mouthfeel. The finish is smooth and slightly dry. The carbonation is moderate.

A little more malty and less dry than other Saisons, nevertheless, it has some nice flavors. I would have again.
