Formerly Off Color / Amager - Dino S'mores

Initially an Amager Bryghus Collaboration

When we launched BorrachaBaker made us some s'mores shaped like dinosaurs for our launch event. Then, we made an imperial stout with graham flour, marshmallow fluff, vanilla, and cocoa nibs with Amager and West Lakeview Liquors. Then, we brought this beer to the Brewpub Shootout and paired the beer named after the food with a food the beer wasn't named after. People were confused and named it best beer (or was it food?) at the Shootout.

Direct from the fridge, this started out with some sweetness from the s'mores flavorings, but those flavors disappeared as the beer warmed. Strange. It ended up being a roasty imperial stout. Still tasty but still kind of a weird progression.

Poured stout black but was completely missing any head at all. There was carbonation, so not sure what caused the lack of foam:
The aroma was lost on my Covid damaged nose.
The taste- I will admit that I grabbed this from the cellar thinking it was a dessert stout and I suppose technically it is. But it wasn’t sweet.
The marshmallow/vanilla was the strongest non stout flavor with chocolate rather getting buried in the malt mix. There was a brief foray into graham cracker territory but it was very short lived.
None of the additives provided a sweetness that was expected from the name but all were present.
Well crafted I’d say, unless, of course, they were going for pastry stout.

Appearance: Pours a completely black color with a large dark tan head that fades quickly. (3.75)

Aroma: Mild aromas of chocolate, some toasted graham cracker and marshmallow. Smokey. (3.50)

Flavor: Moderate flavors of chocolate, toasted graham cracker and marshmallow. Some smokey and toasted flavors before a relatively dry finish. Smokey and papery flavors linger. (3.50)

Feel: Medium-bodied, low carbonation. Finishes thin, dry, mildly toasted and smokey. (3.25)

Overall: I think I expected more from this one. The aromas and flavors seem muted. Mildly toasted and leans smokey. Low carbonation and overall dry. (Rating: 3.49)

Black body with deep dark brownish red tinge. Super roasty stout. Heavy in the dark chocolate roasted malts.
Hefty metallic bitter tinge due to just how roasted and smoky it is. The adjuncts come through a bit, the Madagascar vanilla is definitely the spicy bitter type of vanilla, the molasses helps anchor the malty profile, as does the graham flour. The marshmallow comes out a bit but is certainly enmeshed well within the confines of the black malts and roasted adjunct profile. The feel is very well carbonated.

I have some respect for this one because it's definitely not your run of the mill sweet smores, but the classic actual roasted smores just like it would be over a bonfire, with charred bits in the marshmallow, melted chocolate, and graham cracker. This nails it in that regard, and definitely for the person who likes the heavily roasted charcoal type stouts.

Bottled December, 2016 so this one has some age on it. Pours a cola brown. Small amount of short lived head. Aroma isn't anything great, but holds its own, especially after 6 years. Notes of cocoa and sweet chocolate, and an underlying booziness. Taste is much more that of a porter than a stout, with some pleasant roast the dominant characteristic. Any depth or complexity is lost to time. Feel is light and thin. Overall, time has caused the flavor of this beer to simplify greatly, but it's still enjoyable.

Something was odd with this one. Poured from a 16oz. can into a Teku. This beer pours almost like Coke, the beer not super opaque, the foam with very large bubbles and not stable. Taste was okay, but overall I had expected something more rich and velvety. Will try this again when I find it on tap in Chicagoland.

It had all the components of a good imperial stout. I didn't taste the graham cracker flavor at first but it did show up towards the end. There was a nice sweetness to the beer so it wasn't overly robust. The chocolate flavor was definitely present. Overall it was a very good sipping beer and worth getting again.

Dark, dark brown pour. Almost black. Fluffy dark, tan head that goes away pretty quickly.

Malt, graham cracker and sweet lactose on the nose. The graham cracker is the most prominent.

Dark and roasty malt flavor up front. Strong and bitter. There's a hint of graham cracker and sweetness in there but then the finish is long and bitter. You'll get some heat from the alcohol but I wouldn't guess based on the flavor alone that it's 10.5%.

It's pretty thick and viscous but not syrupy. Especially since it's not too sweet it never comes close to being cloying. Fairly light carbonation.

This is a tasty stout. For being a S'mores stout, I wouldn't mind a touch more graham cracker flavor or a little more sweetness. But it's definitely a solid stout. I'd get it again.
