Notes / Commercial Description:
John likes bees. John’s like of bees led him to hanging out with other people who like bees. Some of the other people who like bees work at The Field Museum. The Field Museum was opening a bistro and bar. John was opening a brewery. And that is pretty much the story of how Off Color and The Field Museum collaborated to make this crisp, clean pilsner with a dry-hopped bite far inferior to Sue’s.

12oz bottle, brewed and bottled for The Field Museum in Chicago, poured into an Off Color cervoise.

The beer pours a lightly hazy golden straw color, lots of bubbles rising to the top of the glass. There is about two fingers of foamy white head that dissipates quickly leaving a few spots of lace. The aroma is great, noble hops, crisp grass, a touch of citrus, biscuit and pilsener malt. Nothing too complex or crazy, but really inviting with a nice amount of hops. The flavors echo the nose well, loads of grassy hops, noble hops, a touch of citrus, but nice earthiness and sturdiness to the beer and the malt bill is almost what feels delicate, soft, chewy and pale with a lingering mineral water flavor. The mouthfeel is nice, super crisp, lighter body, coats well, plenty of zippy carbonation that has a bit of a dry bite at the finish.

Verdict: A really great Pilsener from Off Color, definitely a highlight in their lineup. Crisp, refreshing and while it's hoppy, it's not AGGRESSIVELY hopped like many American brewed hoppy lagers. Perfect beer to finish out the dog days of summer.

Pours a crystal clear effervescent gold color. Thin frothy white head dissipates quickly leaving no residual head. However bubbles continue to course upwards. Looks good for style outside of the head. Needs a bigger head, bit more retention for the style.

Smell is crisp, with a nice grain malt, some corn notes, and some grassy floral hops. Pretty simple but in line with the style.

Taste is slightly grainy with some corn notes. Floral grassy hops come through on the back end. Hops are rather strong and bitter. Lingering bitter grain flavor. touch sweet Seems overly hopped/bitter for the style and the cracker pilsner malt is rather subdued. Much more of a grain/corn malt. Still in spite of that, its a good tasting beer, and is not a huge aberration for the style.

Feel is light, crisp, drinkable. Medium carbonation. Dry finish.

Overall a nice american take on the style. Certainly American, but reminiscent enough of the style. In terms of a good go-to cheap american made pilsner, this might be my favorite.

12oz Bottle
Binny's Willowbrook

Tooth & Claw, a dry hopped lager brewed for the Field Museum. Giddyup! A crystal clear glowing golden libation this beer is. A creamy yet silky crown is produced on an easy pour that eventually settles to a chunky crown. Streams of carbonation pop to the surface from here and there, all over the bottom of the glass. This is a good looking beer.

Freshly cracked grain leaps from the glass. Cereal like and a little damp. A soft cereal like sweetness accompanies that graininess. A welcoming buzzsaw grassiness rips through the middle along with a soft herbal hoppiness. What's there is clean and supremely crisp. Very nicely done.

The flavor pops, even more so than the nose. It's bright and vibrant with that ultra clean graininess at the forefront. That cereal graininess is minimal in the flavor profile. Is that a faint squeeze of lemon? Why yes, I believe it is. A grassy hoppiness runs over the back of the throat bringing with it some of that earlier mentioned herbal quality. This is a damn fine beer.

The feel sits right where it should. While the feel is light there is some body, the carbonation is active and helps move it through at a rather quick pace. The bitterness is moderate+ for the style and lingers all along the tongue. The finish is dry, which is a must in my book.

This is another fine beer from the folks at Off Color. A supremely clean, bright lager with that added rip of hoppiness. I could drink this all day long, summer or winter. Very good indeed.

Pours from the bottle a crystal clear straw color with a creamy, white head. Lots of carbonation. Spotty lacing.
Aroma is biscuit, spice, lemon, and grass.
Taste starts with the sweet malt followed by a nearly-tart middle of lemon with a spicy and refreshingly bitter close.
Mouthfeel is light and well carbonated yet smooth.
A crisp and refreshing beer.

I bought a bottle of this off the Binny's single shelf. It poured a clear yellow with thin white head that is not leaving much lace. The scent had hints burnt maize. The taste was nicely balanced and easy to drink. The mouthfeel was lighter in body with good carbonation. Overall it's a solid beer.

Pours pale clear golden with slight head from bottle into glass. Rim of foam lingers and beer leaves a solid amount of lacing on the glass as you drink. Smell is crisp malt and hops with a faint cider-like tartness. Taste is similar. Feel is crisp but not too dry on the palate. Extremely drinkable and maybe a new favorite for the style!

Bright pale gold, slow rising carb trails, compact and finely textured head of creamy white foam. Sticky halo of lace in the glass, thin veil breaks across the surface after a couple sips.

Aroma is full of grassy noble hops, slight lemon zest and hay notes.

Taste is firmly bitter and grassy as well, clean and crisp feel with a light earthy hop character to provide some nuance. Dry and lightly bitter aftertaste. Simple and unfettered, very easy to drink. Paired well with Pho's duck curry.

This one pours a clear straw yellow, with a small head, and lots of lacing.

Smells like crisp grassy hops, mineral water, slight fruitiness, and crackery malt.

This is a pretty bumpin' pilsner. It's quite crisp with a very slight lagerish fruitiness. There's crispy crackery malt, sharp grassy hops, and a slight bit of spicy graininess.

This is light bodied, crisp and fairly clean finishing, with a good level of carbonation.

Off Color almost always does well by me. This is a nice pilsner.

Poured into a Seattle Beer Week pint glass. Pours a light to medium golden amber with a half finger white head with good retention and nice lacing. Aroma of grainy biscuit malt with almost a wheat profile, dry grassy hops, light lemon. Flavor follows with grainy, husky biscuit malt, grassy and lightly citrus hops, lemon and mild grapefruit citrus, finishing with lingering dry grassy hops. Medium bodied with light creaminess. This has a classic pilsner profile, with authentic tasting grainy malt and grassy hops. The hops have slightly more herbal flavor, but not as much as I'd expect from a dry hopped lager. Still a great balance between the malt and hops and to my taste, quite traditional. Full flavored from start to finish.

A: The beer is crystal clear light yellow in color and has a slight amount of visible carbonation. It poured with a finger high bright white head.
S: Light to moderate aromas of bready malts and floral and grassy hops are present in the nose.
T: The taste follows the smell, except that the flavors of bready and pilsner malts are a little stronger than the floral and grassy hops.
M: It feels medium-bodied and clean on the palate with a moderate amount of carbonation. There are also some bits of crispness.
O: This beer has a good balance between the malts and hops.
