On-tap at The Publican Tavern, ORD Airport, Chicago, IL

A: The beer is relatively clear yellow in color and has a slight amount of visible carbonation. It poured with a short white head that left a thin collar around the edge of the glass.
S: Moderate aromas of Belgian yeast are present in the nose.
T: The taste follows the smell and has additional notes of pale and sweet malts with a light amount of bitterness.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation.
O: This beer isn't nearly as yeasty or spicy compared to other beers in the style but is very flavorful and easy to drink.

Poured from a 12oz bottle into a tulip at 45 degrees,

Look: Pours a pale, light, yellow color that is hazy. Minimal head. Bubbly
Smell: Minimal. Some fruit, maybe apricot, raisin, or green apple. There may be a slight sweet biscuit and honey malt aroma start to develop as the beer warms.
Taste: Spicy yeast initially. Some coriander. A clean white wine flavor with some apricot, raisin, sweet honey biscuit underneath. There may be some dark sweet currant or lychee, but if so it's subtle.
Feel: Medium bodied. Appropriate balance of carbonation and heaviness. Finishes dry and clean on the mouth.

Compared to Apex Predator: This one is similar in color. Slightly darker and paler yellow. Has less aroma. Less earthy, rubber funk. Less tart, pear fruit flavor. With lack of tart fruit or funk it demonstrates more of its clean white wine, apricot, or sweet honey biscuit flavor. Less astringency and more of a crisp clean finish. Overall, it's just more mild than the Apex Predator. Worth more reviews, but I can see why Apex Predator is the more popular cousin in the family.
