Notes:
CCGW is a blend of three barrel aged wilds: a funky saison aged in a Sangiovese puncheon with Rangpur limes, a foedre aged wild ale finished in a Caledonia Spirits Tom Cat style gin barrel hand selected by the Publican, and lastly, a third wild ale aged in a FEW gin barrel. Bright, sparkling citrus with a deep, herbal spiced nose, mild acidity, with the Sangiovese puncheon contributing red wine spritz-like notes of black cherry and dried cranberry, all bookended by lingering juniper and tannin from extended aging in gin barrels.

Draft pour at the Mousetrap, 8 ounces in a stemless wine glass. Lil acetic, but tasty and complex. Fruity with mild juniper and layered barrel complexity. Thanks to Bill for this one!

8.5ml bottle poured into Allagash Chope glass.
Appearance: Deep orange golden bodied beer that is semi translucent to light. Bone white head that stacks up to 1 finger tall and fizzes away to thin ring around the glass. No lacing is present.
Smell: Big blast of lime citrus. Well water minerals. Gin and a light oak funk. Big botanical notes reminiscent of Aloe Vera. Smells very fresh, bright, and clean.
Taste: Starts off with limes and mellow wet oak. Well water minerals. Gin notes are perfectly balanced here and the botanical notes are lingering in the finish. These are flavors that I haven't actively tried to seek out, but they work so well together. Complex, interesting, and unique flavors here.
Mouthfeel: medium light bodied beer with moderate carbonation levels. Creamy texture. This is not overly acidic. Very bright and clean wild ale that will not give you any heartburn.
Overall: Perfect melding of limes & botanical forward gin notes. In this beer, Gin barrel aging is as good as it gets. Off Color executed this beer flawlessly. If Side Projects made a beer like this it would be an absolute whale. Off Color staff also mentioned that this beer ended up sitting in barrels way longer than originally planned, but were very impressed with how well this beer turned out.

On tap at Off Color - The Mousetrap in Chicago, IL.
This one pours a golden dark orange-ish color, with a small head, and lots of lacing.
This smells like funky citrus, agua fresca, lemon, white wine, gin botanicals, and oak.
Gin barrels are always a good choice for wild ales, and this continues to make me think that. There's a refreshing citrus and light spiced character, some herbal tones, a touch of cherry and almost almond, cranberry, juniper, grape, and wine.
This is light bodied, clean, slightly funky and slightly acidic, and very drinkable.
Off Color is one of the Midwest's most underrated breweries. They can do a lot of things very well.
