Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it's hard to make.

All I got was a weakly flavored, average wheat beer.

Light golden yellow and clear, pours virtually without head, lightly carbonated. Taste is immediately lightly sour, followed by citrus and coriander. This is an outstanding summer beer that can be drunk year around.

Murky dandelion hue.
White head; strong lace.
Dandelion & banana nose.
Medium thin mouthfeel.
Dandelion, mild lemon & a hint of fresh cut grass flavors; a mild honey sweetness emerges as this warms.
This would be a great summer sipper, but works as a fine session ale year round.

Light gold in color with a light haziness. There’s a quarter inch of eggshell white on top. The aroma is of pale wheat and faint sea salt. I’m tasting pale wheat with a gentle dose of sea salt. The mouth is moderately salinic, dry, and crisp.

Appearance: Arrives slightly hazy and goldenstraw colored with a creamy head that leaves a few shards behind
Smell: Sour wheat, lacto and coriander galore
Taste: The sour wheat aspect launches along with a touch of lemon; the coriander really builds, through the middle, with a hint of salt in the finish
Mouthfeel: Light bodied with moderate to high levels of carbonation
Overall: I like the taste of coriander and the way it blends with the tart wheat elements here makes for a satisfying and refreshing brew

This very pale, almost clear leipzig gose has only a modicum of flavor from the added coriander. But, if you're not a fan of that flavor, then this beer likely won't be the beer for you. I can take it or leave it; my wife, on the other hand, enjoys the flavor very much.

Solid wheat beer. Solid color and aroma. First taste is without bitter aftertaste. Good taste throughout. Would buy again.
