Brewed with Pilsner and Flaked Wheat, and fermented with Kolsch ale yeast this essential beer is dry-hopped with an abundance of Mandarina Bavaria and Centennial. It is our smoke signal to all brewers, our brethren in craft, and all who enjoy a light quaffable ale with hearty aroma: this is your beer.
It is your salient moment. Walk the path of righteousness, or wear a cloak of apathy. It’s a choice we all must make. So what is real? The answer lies within your belief in an ideal and a thirst to search out that which is pure. Take in your hand this humble vessel, stand against false idols, and fortify the beauty you helped build as a lover of craft. A simple ale made of barley, wheat, and a delicate dry-hop. Find pride in your light beer. Follow our smoke signals. [We were excited to score some killer new hops this year, and so we now showcase hand-selected Comet and Cashmere hops in this limited run of 2020 Billows.]

The clear pale yellow colored beer pours out into a Duvel glass with a 1/2” white head that recedes slowly but visibly recedes to a ring of foam and a thin irregular layer that partly covers the liquid. Sipping creates two slender arches and lots of small patches and legs of lacing.
The aromas are both citric and floral with some tangerine, lime and lemon. The malt has some honey like sweetness and some grainy character.
The flavors are much as expected from the nose with some honey-like grainy malt sweetness and some light bitterness. The bitterness both citric (tangerine, lime and lemon) and floral.
The mouthfeel is on the light side of medium bodied and fairly smooth with only some light carbonation. The finish begins as the hop flavors and and grainy sweetness begin to fade allowing the light hoppy bitterness to close the show while
Overall this was a reasonably well made and interesting beer to try given the base recipe was a Kolsch except for the hops. I found it reasonably drinkable but probably won’t be having it again since I prefer the more traditional Kolsch hopping.

I had this beer on-tap in a shaker pint at the Longleaf Lounge in Raleigh.
Appearance: light yellow hue with a moderate haze and a thick finger of pillowy ivory foam.
Smell: lightly malty and even slightly herbal aroma. Soft and lovely.
Taste: soft, rich malt flavor, with perhaps a bit of yeastiness and a kind of herbal, earthy hop flavor. I really like it.
Mouthfeel: medium body with a decent carbonation and creaminess.
Overall: this beer doesn’t seem like a typical Kölsch to me, but I am really digging it.

Look: It pours golden and clear. The head is white and has good retention.
Smell: It has has a grainy aroma. There are some spicy elements with herbs and a bit of orange.
Taste: The citrus flavors are forward with some grain and herbs mixed in. There is dough in the background with a touch of spice.
Feel: It has a medium light body with an aftertaste towards the bitter side.
Overall, maybe this should be labeled a Kolsch IPA. With that said, it has decent flavors.

12oz can, no date. Opened 4-25-20.
"Occasional" release according to the brewery's website, this version hopped with Cashmere and Comet.
Poured with a huge 4 finger meringue like white head with a substantial portion rising over the rim of the glass.
Fantastic retention - doesn't budge. Heavy lacing.
Insane amounts of carbonation rushing upwards. Looks like potentially too much (?).
Light straw golden color with good clarity.
Fruity nose with lemon-lime hops and a cereal grain malt aroma.
Flavor similar to the aroma, subtle but substantiated by the aggressive hops.
Light, thin body, high carbonation. Hint of sweetness early that's dried out in the finish.
Good to Very Good.
