Pils with Fresh Hops

A rogue faction. The deviation that keeps us above the surface. From deep within the walls of our torn and tattered memories, we found this metamorphosis so damn necessary. This year's fresh hops included a massive early harvest of Cashmere from our friends at Hop Head Farms in Michigan. Driven down here and used primary for a massive dry hop in our annual DIPA, we pulled a luscious dose of these uniquely pineapple, lime and spice-driven hop flowers over to our experimental brewery and whirlpooled a simple pilsner base among it. The beer was fermented low and slow with our house lager strain, and spunded to produce natural carbonation. The result is one of our more powerful non-dry-hopped lagers ever, rife with fresh strawberry lime cooler, exotic spice cake, and fresh honeydew slices.

so bomb to try this one, so cool of it to be on tap at the lager event trve put on, no denying these two are some of the best. the thing about this one, is that the base pils is so dang good, like it would be good with any hops at all, its these fresh cashmere hops that push it over the edge into this unique and excellent realm. wheaty looking yellow, not quite clear, impossibly light still, nice head from the draft, white and lasting with some lacing even on my plastic outside cup they pour it into. not overly hoppy in the nose to me, although freshness is undeniable in it, lightly lemony and herbal, slight sativa fruitiness, even fruity cereal vibes with the pils malt coming through, good minerality, and a european lager yeast, low bitterness even though its hoppier overall. the flavor is a bit more hop forward, not in intensity so much, but in a distinct way, they start early, have some oily resinous depth, and bring light tropical notes, lemongrass and coconut, as well as more familiar mowed lawn to the mix. its real dry, love what the lager yeast does here, and its got high carbonation, easy drinking without feeling in any way dumbed down for that purpose, and while its the softer side of fresh hop beers overall, i think its a triumph, they cant all be monster ipa types. good on burial for this one, and on trve for making it happen for me. delicious.
