Notes: Double Barrel-Aged Imperial Stout Aged Twice in Bourbon Barrels

Born into this house ages ago, the tale of this massive earthen tool has carried us into Christmas with each passing turn around the sun. Made of multiple batches, this blended Imperial Stout was forged of 60% Imperial Stout aged in fresh Willets bourbon barrels for six months and then racked into new Willets bourbon barrels for an additional six months, 20% Imperial Stout aged in Willets for 22 month, and 20% of our 15% big stout base aged in Willets bourbon barrels for 10 months. We are mind boggled by the complexity and depth in this year's composition. A rocks glass of bourbon-sauced dark chocolate, brown sugar covered brownies and caramel-coated figs.

Burial stouts won’t be the thickest, but at 15%, it’s clear the yeast was (were?) busy eating up all of the fermentable solids and turning them into alcohol.. If that even makes sense scientifically.. But the look and viscosity of the beer is irrelevant the moment the amazing aroma crashes through your olfactory sensory neurons, and you start to understand the sorcery that has occurred in those boozy, oaky bourbon vessels. It’s an explosion of oaky coconut and vanilla tootsie rolls. It doesn’t smell even the least bit sweet, and just beckons you to take a sip.

The flavors are flawlessly balanced. The barrels have imparted sumptuous flavors of coconut, caramel, vanilla and dry, oaky tannins. As it warms, more dark chocolate bitterness from the toasted malt, a subtle alcohol burn in the aftertaste, and a huge punch of coconut. It’s infallible and wonderful.

Mouthfeel is silky smooth as first, with a creamy carbonation. As it warms, the beer thins out, which you’d expect from a double barrel, 15% stout. But nothing can change how brilliant this beer is. An outstanding drinking experience. Need more of this!!
