Double Barrel-Aged Imperial Stout Aged Twice in Bourbon Barrels.

The climatic ensemble. The 10th volume of this epic arrives. An indelible etching on the tomb of our relics, and a reminder of the pathway we trudged along to stand where we now do. The tale of this massive earthen tool has carried us into the end-of-year festival with each passing turn around the sun. Made of aged stock that reached nearly 16% and was blended down for legality purposes, this blended Imperial Stout was forged of 75% Imperial Stout aged twice in fresh Willet bourbon barrels for more than 1 year, and 25% young-aged Imperial Stout, which serves to both invigorate life while bringing us back to legal limits. Welcome to our 2022 Cuvee. A hand-carved rock of ice melded with double-oaked Woodford, accompanied by a slice of bourbon chess pie with caramel sauce, and a chocolate ganache with rum raisin.

Picked up a 500 ml waxed bottle from the Burial South Slope location 12-23-2022 for $25. Reviewed 12-30-2023.

Beer poured black as night with an okay tan head.

Nose, upon cracking the cap, engulfed my local oxygen supply with a huge amount of chocolate, vanilla, and leather.

First sip was a belly warming experience, perfect for a low 40's late December afternoon. The large malt base is given to mild roast with notes of cocoa and chocolate. The barrel delivers as i am getting leather and vanilla. The barrels provide a perfect balancing act to the huge malt base.

Mouthfeel is thinner than expected, medium bodied and smooth.

Overall this is one tasty brew!

Look - black thick nice rimming and lacing
Smell and taste - really nice boozy malt sweet chocolate with a woody barrel
Feel - full body with a lighter carb
Overall - Fantastic non adjunct beer

Had on tap. This is a sipper that demands you slowly take in the complex beauty. That heavy, thick, perfectly warm and refined smooth body invites you into all things dark in ba stouts. Nose is barrel and molasses forward with dark chocolate, caramel, and raisin supporting. Taste adds rugged earth and vanillin undertones, otherwise the same as the nose. Deep and complex. Oh yeah looked good with an opaque midnight black body and beige cap

Pours jet black. Thin brown line of head that reluctantly emerges, but then settles around the edge of the glass. A good viscosity.

Aroma doesn’t exactly jump out of the glass, but you can tell this is going to be a barrel bomb. This oaky, bourbon, almost chilled, minty booze aroma emerges, with cacao, espresso and vanilla.

Flavor is exactly what I am looking for from barrel-aged stouts this days. No bullshit added to it. No undrinkably thick, syrupy body. Just a stout, expanding and contracting into their surrounding American oak staves, extracting all the vanillin and boozy residue soaked into the fibers. It’s a dark chocolate explosion, with a good rum-soaked dark fruit aftertaste to provide some balance. Oddly enough, it’s sweeter when it’s cold, but as it warms and opens, it gets far more nuanced and all of the bourbony goodness emerges with notes of flaked coconut-covered truffles, black cherries, cacao and a touch of rye spice. I feel like this would age gracefully for years.

Another barrel-banger from Burial. Their barrel program is criminally underrated.
