A: The beer is relatively clear golden yellow in color and has a light amount of visible carbonation. It poured with a finger high bright white head that died down but has very good retention properties and consistently left a short head covering the surface (this isn't surprising given that the cork exploded out of the bottle and it started foaming).
S: Moderate to strong aromas of Belgian yeast are present in the nose along with hints of lemons, the latter of which become a little stronger as the beer warms up.
T: The taste follows the smell, having lots of flavors of Belgian yeast along with notes of lemons and peppery spices.
M: It feels light- to medium-bodied and somewhat dry on the palate and has a moderate amount of carbonation.
O: This saison is packed with flavors of Belgian yeast and has a nice dry mouthfeel.

The first one of these I have had the pleasure of enjoying on tap. This is fantastic stuff, obviously a little less inventive and unique than the summer or the fall versions, which were stunning, but of equal quality and definitely among the gold standards of not wild saison made in the United States. Golden without much haze, over an inch of white lace head, and a lot of visible carbonation. No wild yeast here, but an earthy wet Belgian type, notes of straw and hay, dried flowers, many different bready cereal malts, and a slight white wine tang. estery but not overdone, with some definite spiciness to it, clean though too, old worldy without being rustic to me, amazing fermentation profile overall. Dry for one, very lively on the carbonation too, but it's also real distinct on the grain. Maybe rye with the wheat and barley, but even something lesser known like a spelt would not surprise me here, it's fresh baked and earthy, mellow too. On the one hand, it's rather complex with all that's going on, but on the other hand it's clean and easy drinking, interesting but simple, very traditional, classic in many ways with a mild hoppy finish too. Infinitely drinkable and enjoyable, I love these guys! this has become a gold standard in the style for me!

Rustic, Spicy, Bready, Yeasty

Pours a hazed straw pale color with a massive, creamy head. Carbonation is over-the-top, but in a good way. Soft herbal aromatics with yeast and dough. Crisp, super creamy and lively on the palate. Herbal sweetness, smacks of lemon and honey suggestions with bready, spicy and peppery notes. Hint of banana skins with a bone-dry finish that lingers a bit, this beer is earthy, slightly tannic and full of yeast complexities that urge you to take another sip. Drinks rustic and authentic. I really dig this Classic Saison.

750 ml corked and caged bottle served at around 50 degrees into a goblet.

Blackberry Farms' Classic Saison is pale straw yellow with just a slight bit of haze. The head is thick and white but doesn't have very good retention. It settles quickly with no lacing.

Aroma is a heavenly blend of Belgian yeast, faint citrus, and floral notes.

Flavor is light on the malts and hops which allows the yeast to shine. Some funky farmhouse character, lemon, pepper, and grass all come through.

Mouthfeel is medium bodied and perfectly carbonated. It's balanced, drinkable, and very enjoyable.

Overall one of the best American saisons out there. A little more expensive than my go to saison from Funkwerks but also on a higher level.

Sold by the recommendation of Beer Temple staff as the American rendition of the DuPont classic, he still may be right.

Initially tasty, almost great. But not suitable for brunch. Too hoppy. While hops need to balance the malts, the herbs need to complement the food herbs. Not so at a low-herb brunch.

Pairing aside....nice head on this, but otherwise below average Looks. Murky.
Getting nice citrus notes; probably brought out by the yeast. Tastes initially are complex and lip-smacking from the lemon. But too quickly the hops dry out the mouth before salivation builds momentum. Bone dry finish.

OA: the recommendation may still be right. Funny that I did not get warned about the price... worth it once. But still looking for a value like DuPont.

Rather sweet with a bigger body, very belgian and not really a saison in the american style at all. Overall a nice beer, just know it is rather belgian overall

Light honey color body. Lots of off white bubbles stack to achieve a 3 inch head with little effort. Nose is a nice mix of pear, zesty spice and citrus rind. Taste is just perfect for the style. Thyme and slightly un-ripe pear get together well on the flavor profile. Crisp and well carried is the style here. This is a very good saison, the label doesn't lie when it says classic.

A: pours with a light, soapy, 1 to 2 finger head, and a clear, straw gold to amber body
S: mostly spice, with some traces of hay
T: bready malt, and a spciy hop character with a hint of lemon, honestly the label describes this beer pretty well
M: dry...yeah dry, with a subtle tartness
O: a credit to the style, well done

Picked up a 750 ml bottle at the Hilton Head Island Whole Foods this past Sunday for $14.99. No bottling date visible.

Beer poured golden with a beautiful white head with the initial pour.

Nose is crackers, pepper, and hints of lemon.

Taste follows the nose. Classic saison in the true sense with the pepper and lemon notes shining through beautifully on top of pale malt base.

Mouthfeel is heavier than hoped but smooth.

Overall except for the mouthfeel this brewer has nailed the style stone cold! I enjoyed the indulgence!

The beer poured out pale yellow, with a cloudy body, and a large head that was over three fingers thick. The aroma was floral, spicy, and yeasty. The taste was delicate, with flavors of lemon, white pepper, grapes, orange peel, and coriander. The body was creamy in feel, and very light on the tongue due to the heavy carbonation. The finish was very dry. This was a very good, authentic tasting Saison.

Pours an appropriate pale hay color, vigorous head but underwhelming retention. Aroma is what you'd expect from the style - mild pepper spice, hints of lemon citrus & straw - which is fine for what it is. Definitely lots of Belgian yeast on the tongue - almost like a Belgian IPA - with clove spice & bread notes. Some lemon & orange peek their head in briefly, as does a wet hop note, but they are a tad too muted to add much to the overall profile. It has good carbonation but finishes a bit heavy with lingering bread maltiness, which was dissapointing. Overall a good beer but very pedestrian.

Bottle: Poured a clear golden color ale with a large pure white foamy head with good retention and some lacing. Aroma of light hay and straw notes with light cereal notes is quite delicate and refreshing. Taste is also a mix between some straw and hay notes with some cereal notes with light peppery notes. Body is about average with good carbonation. Well brewed with good balance and delicate flavours.

Strong aroma of classic and saison. Carbonation is classic, reminiscent of saison. Perfect. Minus 1 point because it's lacking blackberry flavor.

Pours a hazy straw colored yellow with a big frothy white head that leaves gobs of lace. Cork popped by itself when I removed the cage so be careful.

Aroma is light biscuit malts, hay, light apricot notes, peppery spice mingled with earthy yeast. Some light tart notes almost like was aged in white wine barrel, but not much funk.

Taste is like the nose nice light malty, good fruity notes move to hay and funk that wasn't in the nose.Finish is lingering barnyard fun lots of spicy yeast notes. A descent amount of hop kick more so then most saisons.

Mouthfeel is nice light medium carbonation is really peppy and gives the finish some punch.

Overall an enjoyable saison, Americans are doing justice to this style nice to see one from my home state kicking some ass.
