Le Saisonnier is named after the seasonal workers for which the first, old-world Saisons were originally brewed. Amber in color and fermented in and aged in Chardonnay barrels with a blend of yeast and bacteria, Le Saisonnier is bright, balanced and refreshing.

Murky golden pour with a finger of white foam. Smell is excellent with hay, equal funks (barnyard and cheesecloth) and sour fruit with an emphasis on lemon, peach, orange zest, and green apple. Taste is more sour fruit and bright vinous oak forward but similar, green grape sneaks in as a result, but not as funky as the nose. Feel is a striking balance of wet and dry with mild funk and oak matching the sour in a light and bright way

Blend #5, 4% ABV. Poured from a 750mL bottle into my Unibroue tulip.

Brilliantly clear (initially) Naples yellow body supports three fingers of ivory foam that recedes gently to a lasting dense mousse. Sticky, rich lacing; very good to excellent retention.

Lovely phenolic/funky yeast notes with winter fruit, wildflower, and barnyard notes in harmony. Fairly subtle aroma overall. Hints of orange blossom and lemon zest as the ale warms.

Tart palate entry, citrus-driven acidity with low peppery funk and a forward grain character contributing a balancing sweetness. Malt is crackery and not without some complexity. Some wood and mineral character from the barrel rounds things out, leading into a long, crisp, fairly dry finish. Has an almost "lager" like component with a fleeting whisper of metal, though not enough to get in the way of the pleasant flavors. Low, clean bitterness throughout.

Medium-bodied, zesty, faintly puckering with some raw pu-erh like tannins. Refreshing, but not as easy drinking perhaps as the ABV would suggest.

Very nice, oak aged example of the style, though in my opinion, not worth the extra cash to obtain outside its market.

Tap pour at Side Project. Served chilled in a wine goblet.
Cloudy, pure gold colored body. Active surface with ring. Leaves behind small spots of lacing, but most slide back into the body.
Aroma of funk and oak.
Taste is tart and crisp. Flavors of white grape, peach, green apple, and oak. Funk of leather and horse blanket.
Medium mouth feel. Dry finish. Good carbonation.
Delightful brew and blend. Blend #5.

blend #5

Translucent yellow, lace of white foam.

Sharp and citric.

Citrus or lemon isn't as much as it is on the nose. Herbal maybe from the hops. Need a little more, this might be a bit oxidized.

Love the high carb.

Christmas gift from my lovely wife. Bought from San Diego Beer and Wine Co. (which by the way, as by far the best beer selection in SD that I have found so far). ~30 for 750 mL bottle, blend #5. No bottling date, consumed 01/14/23. Poured into a snifter and consumed watching the 49ers and Seattle game. This brewery has been on my list for a while. I am very excited to be giving them a try!

A&S: Honey-colored beer. The head is white and fizzy without much volume (although develops more later on) and has no lacing. No sediment. The aroma includes oak, wheat, green apples, lemon zest, coriander, and barnyard funk.

T&M: Needs to warm (the first sip has little to no flavor). I am very surprised by how much flavor they have been able to pack into 4% ABV. A nice balance between tart, sour, and sweet. Barnyard funk, peaches, acid. Lighter mouthfeel thickness-wise. A little watery, semi-dry finish. Crisp carbonation (tingles), but stays fairly smooth.

Overall: Interesting this beer doesn't change too much from the first sip to the last. I typically try and keep the rating hidden. But due to the cost, I looked. This beer lived up to expectations, maybe slightly below, but still a very good beer.

Pours a dark golden honey with two fingers of frothy white foam. Aroma is stone, grassy & herbal hops, and green apples. Flavor profile is grassy, herbal hops, lemon zest, and stone initially. Biscuity bread malts, oak, green apple, and faint pear show up in the final third of the flavor profile. It is soft and delicate at the onset, but finishes stronger. Acidity is low, but picks up towards the finish, peaking with the lightly sour finish. It's a smooth crescendo of tangy sweet to mild sour. Mouth feel is soft in effervescence, at least initially. The finish sees the carbonation build to a prickly sharp finish. Thickness is thin. Overall, a resolute saison with a finely done sour tanginess at the end. It's well balanced, shifting weight from the front to the back flawlessly. Easy drinking without being dull.

Served in a 15.5oz Speigalau tulip from a 750mL bottle. Blend #4. ABV 4%.

Blend #4 Bottle.

Beautiful clear golden pour. Frothy white head quickly rises and fills half the glass, but is quick to settle back into the body of the beer.

The nose is fairly musty, with notes of sprouted grain, cracked pepper, lemon zest, coriander, and a touch of ammonia.

The palate is considerably softer, with a great minerality and citrus-forward profile. Coriander strikes again, with undertones of dry oak and a balanced acidity on the back end.

Soft, mildly dry. Good minerality with low-medium acidity. Effervescent carb with good lingering funk and oak on the tail.

Blend 4; poured into a pair of side projects stemmed bulbs.

This is a lighter and less acidic version of saison du Fermier. Same flavor profile. Soft and creamy t b exture. Less dry and saison do Fermier as well. Better text her as well.
