Notes: Black & Wild is the antithesis of most American Wild Ales. The robust nature of the intense acidity, bold sour cherries and chocolaty malt is layered with the deep notes of vanilla, spicy charred oak and rich caramels from the used bourbon barrels in which this beer matured for more than a year.

Pours black with a finger of mocha-colored foam. Aroma is twangy dirt, roasty and earthy malts, char, and cherries. It leads with a light twangy sourness, and finishes with a polite bite of char. Flavor profile begins with twangy earthy and roasty malts, and segues into cherries, fig, grapes, and soothing char. Again, opening up with a twange of sour, and finishing with a heartier, dark note. Yin to yang. Mouth feel is semi-crisp with a little silt around the edges. Thickness is medium. Overall, incredibly engaging, offering up varying levels of dynamics throughout each sip.

Blend 3: One of the most interesting beers I've ever had. I didn't expect to love it so much, but honestly- Wow. The acidity, body, barrel and cherries somehow work so well together. Blown away by how complex this was.

Had recently thanks to a friend with a bottle. Poured dark and viscous with notes of chocolate, cherry and balsamic vinegar. Flavor was similar to the nose with the vinegar coming on strong at the end. But my favorite type of sour but good for what it is.

Batch 3. Into a a wine snifter

This is the biggest baddest dark sour out there. There is nothing subtle going on here. Big sour, big bourbon, big body, big cherry. Tobacco thrown into the mix too. A sipper.

Pours a viscous motor oil with no lacing. Nose is cherry, chocolate, balsamic vinegar up front followed by warmth of vanilla from the bourbon. Taste follows the nose well blended of cherry, balsamic, followed by vanilla and chocolate and finishes with a nice acidity and barrel. Feel is viscous (milk) for a wild/sour with minimal carb to clean the pallet. Overall, this is a great beer for a dark sour and all the flavors blend well, the

Glugs of used motor oil black aggressively suppress any build up of head outside of a very thin golden chain.

Viscously sticky yet contrastingly sour, strawberry-cherry balsamic vinegar pairs with a roasty yet chocolatey background. The barrel brings a smoothing, luscious Madagascar vanilla bean character, especially on the nose, and particularly over time as it warms, but the sharply tart cherry and balsamic vinegaryness can be painfully distracting at times.

With a little more deftness of hand favoring more nuanced subtly, this could have been a knockout stunner. All in all it's a bit too ostentatious for me.

Oops! This was full review #5000 for me. Another milestone blissfully ignored until after it passed.
