Pretty much your perfect barrel-aged saison. A barrel-aged beauty with a little white wine (from the Chardonnay barrels) and bacteria tartness that's hard to beat.

Simply outstanding. Lemony, white wine, pleasant graininess. Carbonation and mouthfeel are perfection, adding creaminess without being frothy or prickling. People can keep freaking out for the fruited beers and all take these rustic low abv gems all day long.

Grounded in the midwest but with the soul of Belgium, the taste that makes the rural landscape popular finds authenticity, genuinely and the same rustic charm as the farmhouse from a continent away. Side Project pays acute attention to the time honored techniques of a style that's hundreds of years old.

Biere du Pays billows from the pour with a rocky white lather that crowns a foggy straw body underneath. Its tangy scent is redolent with lemon and crabapple, suggesting a vinous, dry white wine character that's equipped with a spicy tinge of clove and white pepper. Greeting the palate with supple confectioner's sweetness and fresh baking wheat bread, the malt influence is supportive of the fruit and spice to come.

The beer pops off the tongue with its assertive effervescence that pushes the malt off the tongue and ushers in a quick and dry finish, leaving behind remnants of lemon, under-ripened orange, white grapefruit, crabapple and white grape. The bubbles highlight a peppercorn, hay, hop, grass and faint earthy, smoky cumin. Its mild acidity is playfully tart in finish without souring and closes with delicate cork, cellar and weathered balsa nuance.

Light and arid on the palate, the beer's tepid "table-beer" character finishes with the zest of champagne and a mineral quality that's suggestive of seltzer water and its carbonic, refreshing bite. Trailing spice and the residual bitterness of grass and citrus peel is short and keeps the palate refreshed until the next rapid sip.

Poured into a Side Project glass from a 750ml bottle.

Beer pours a nice straw pale golden color. There is a nice vibrant white head that recedes pretty quickly but leave some nice lacing down the sides of the glass.

Aroma is fluffy, slight fruit tartness, notes of apple and apple skin, mild peach skin notes. Woody funk and must. For a table beer it has very nice funk notes. Hay, wood, barn and grain. Tart finish in the nose.

Flavor starts off light but with nice notes of chardonnay. Slight buttery notes with good grape tartness. All very soft. Notes of grain intermingle with the acidity in a very layered and complex way for a low ABV brew. There is tartness, mixed in with some good wine notes and then covered in notes of funky hay, barn and wood. Nice fluffy and crisp mouthfeel. Clean and refreshing. Quaffable.

A- Pours a medium to light yellow, almost to a straw color. The body of the beer is slightly cloudy and hazy with a small, 1cm head. The head reduces down to a thin film that provides just a little bit of lacing. Looks dead on to its description as a table beer.

S- Starts with a touch of funk and fruitiness/citrus on the nose. Fairly complex overall, the smell ranges from funk, slightly tart, a touch citrus, and then to grassy. It pretty much runs the spectrum of available saison scents.

T- The taste starts off with the citrus and slightly tart flavor from the nose. Lemon and a touch of orange hit the tongue with a slight bit of acidity up front before the flavor turns toward a grassy funk. In the middle of the drink there is a light grassy and wheat like flavor that tastes slightly diluted. Towards the end of the drink the funky flavors come in more prominently, with some yeast based bread-like flavors and a little bit of a comeback for the tart acidity. Not many lingering flavors except for a touch of tartness.

M- Light and easy drinking with an effervescent quality throughout. This one really goes down smooth.

Overall, the flavor is a little muted for me, maybe a touch on the diluted side. All of the quality flavors are in there, just a little muted. I really enjoyed the bright and tart aspects that were accompanied by a little bit of funk. This beer could be a great table beer because of its ease to drink.

What a treat! Pours a hazy yellow, with fluffy white head. Classic farmhouse smell. Earthy aroma. I absolutely loved the taste of this beer. There is an earthiness to the beer, but also a very light a crisp flavor, almost as if lemon zest was added. The carbonation makes it seem like you are drinking some kind of spritzer.

Yellow and very hazy complected. Just a wisp of off white in color. I smell light malt and light candy sugar. I taste light malt, sweet Belgian candy sugar, and light Belgian yeast. The mouth is light and refreshing.
