Blend #1 - 75% 2yr old Missouri Spontaneous Blond, 25% Saison du Ble Batch 2. Bottle conditioned for 5 months with our house Brett strain before release.

A splendid beer that has aged terrifically well. This beer is lively, tart, full of stone fruit flavor, and champagne dry on the finish. Definitely my top Side Project offering.

750 mL bottle. Lively carbonation. Clear yellow body. Big white head. Medium collar. Smells of oak with a bit of vanilla. Stone fruits. Light acidity. Tastes like apricots. White wine. Light wheat. Strong carbonation, maybe too much. Light body. Simple beer. I swear it has apricots or some sort of stone fruit.

Consumed 5/24/2015, poured into a SP stem at cellar temperature. Very well carbonated, lost about an ounce due to gushing. Immediately there is the smell of hay, barnyard funk, and a slight geuze tartness. The taste is beautifully complex, thirst quenching, and drinkable. There is a tartness up front that quickly fades as funk, hay, and oak become prominent. Finishes clean. Easily my favorite from SP, and potentially my favorite farmhouse I've had. If I had the ammo to get another bottle, I would, and I would drink it all alone.
