Notes: Blond sour beer inoculated with wild MO yeast and bacteria aged in our 70hL french oak foedre. Only available at The Cellar on the hand pump. The foedre will be filled, used, and refilled often, so the beer will always be evolving. Solera method style.

really neat little wild ale here, i think this or something like it is the base for a lot of their fruited stuff, and it makes good sense. its super dry, so fruit sugars arent going to really mess that aspect up, and its light enough where delicate fruit flavors can present themselves without having to be dosed to the moon and back. that all said though, it stands on its own really well, and doesnt seem to be missing or wanting anything that isnt there, its great just as it is. pale pale yellow with some haze to it and a nice lacto pucker and oak complexion, the apparent neutrality of the wood is cool, not sweet or heavy, but definitely a big influence. notes of lemon and wheat in the flavor, summery and soft, made even more delicate by the relative lack of carbonation, at least compared to some of the other beers they do. i get more than just lacto too, which i like a lot, its a polysymphonic yeast complexion, and its unique among american wilds. it lingers for awhile too, i really appreciate this for what it is. one of the better base type wilds going really, masterfully made. side project has done absolutely nothing but blow me away, this is a great introduction into what they do.

Very unbalanced and extrremely sour. To bad, all others from this brewery has been exeptionally good.

One of the many good offerings Side Project has brought to the CBC 2015 and... for me the winner of the festival!
I've been told this one is the base beer for beers like Fuzzy or Saison du Fermier (which I had the day before and was also excellent).
The nose is great, sour and tart, with barnyard, leather and funk, the taste is even more impressive, with a light sourness on the beginning, fruity in the middle and very funky and complex on the finish, earthy, with barnyard and horse blanket, very long on the palate.
Very impressive and tasty beer!
