Rosé Du BléRosé Du Blé
Notes: Rosé Du Blé is our saison du blé fermented with wild Brettanomyces and Lactobacillus from our family's farm and aged in our Missouri oak foedre. At maturity, it was racked on the skins of Missouri Chambourcin grapes, adding the color, tannins and aromatics inspired by rosé wines of France.

A- Pours a hazy and slightly pinkish shade of bright gold. The evidence of the grapes is clearly evident in the color of this pour, as it is much darker than the regular du Ble. The body of the beer itself it very hazy, displaying the unfiltered nature of this brew and the wheat content. A small and fizzy head forms quickly, but is gone just as quickly, leaving very little foam on top of the beer and very little to no lacing.

S- A light, grainy tartness greets the nose right up front and starts the scent off with a bright note. Quickly after the light tartness up front, a bit of musty funk kicks in and balances the scent a bit. Underneath all of the aforementioned qualities of the smell is a light, grape dryness from the chambourcin skins. The back end of the scent is an intermingling of all of these scents that combine to provide an impression of light fruitiness, somewhat similar to a roll of Smarties, that fades off into a mild, funky, dryness in the nostrils.

T- At first sip, this beer greets the tongue with a mild to moderate tart punch. Much more distinguished than in the scent, there is a wash of sour flavors over the tongue as the drink begins. The tartness is rather dry and quick to move across the tongue, covering the taste buds and subsequently drying them out. The tartness is both dry, but fairly acidic. Underneath the sour notes at the beginning, and revealing itself in the middle to back end of the drink, is the flavor of the chambourcin skins, providing a more fruit-forward flavor to the beer and balancing out a bit of the acidity that was displayed up front. As the beer is washing off the tongue, there is a touch of mild funk that was present in the scent, but not much. The lingering notes on the tongue are dry tartness, a light touch of oak mingled in, and the slightest memory of light chambourcin flavor.

M- From the moment that this beer is poured, to the minute that it hits the tongue, a lot of carbonation is plainly evident. There is a bit of a sting as the beer hits the tongue from that carbonation, but the beer is still easily quaffable. The body of the beer itself is fairly light in weight on the palate, but thickens a bit as it warms, transforming from a spritzy, champagne-like drink into a smoother drink as the drink progresses.

Overall, this is another example of the saison master pushing the envelope a bit and being spot on with his efforts. Cory's love of wine is evident in this beer as it displays both the diverse taste qualities of a rose with a light and bright acidity that his saisons tend to share with dry white wines. This is really a superstar of a beer.

Murky orange, ample foam with a collar of lacing around the edges. Lasting surface coverage.

Aroma is minerally, somewhat closed, not picking up the wine barrel.

Tart and crisp, light bodied with a creamy texture. Vinous with underripe berry or crabapple as it rolls around. Not much noticeable oak or barrel complexity, due to the use of a foudre. Quenching, moderately tart, pleasant enough to drink. Finishes pretty dry. Pretty good, but not worth shooting the moon for.

The beer offers lots of tart white grape skin, white grape juice, a light hit of sweetness with notes of honey, onto grape must, cork funk, and oak tannins on the finish.

Tons of tart character, along with complex notes of grape throughout along with funk and barrel character.

750 mL bottle poured into a snifter. Hazy orange. Darker than Saison du Ble. Smell is white wine and grape fruitiness. Light wheat. Taste has a strong grape flavor that doesn't overwhelm the saison or the wine barrel. Strong wheat. White wine sweetness. Nice. Light tartness. Medium light and well carbonated. The fruit doesn't dominate, unlike other Side Project fruit saisons. I like that about this.

Really impressive in every way, this brew was tart, sweet, complex and full of both fruit and funky aspects. Great pink/purple color started it off and it had a potent nose and flavor packed with barnyard funk, white wine, floral hops, strawberry, raspberry, sour white grapes, brett, dry chalky yeast and nice oaky notes that give off a lot of earthy complexities. Really tasty and interesting brew, I'd love to have it again.
