Noir du Fermier is a dark farmhouse ale in which the robust, yet dry malt bill is balanced with the brightness, depth and rustic character of the wild Brettanomyces and Lactobacillus found on our family's Missouri farm. This farmhouse ale was fermented in and aged in red wine and bourbon barrels for several months before being naturally conditioned in the bottle.

This one pours a fairly dark brownish/black color, with a small white head, and a good bit of lacing.
This smells like funky and sour red wine, charred malt, roast, chocolate, oak, black cherry, and light whiskey.
This is definitely one of the better dark saisons that I have had. The barrel character is pretty killer, with lots of oak, some char, lots of fruity and funky white wine, and just a touch of bourbon.
This is medium bodied, and slightly creamy, with a nice drinkability, and not too much lingering acidity.
This is very underrated in the Side Project pantheon - it's one of the better dark saisons you'll be able to find.

Black in color and impenetrable to light. There's a quarter inch of beige on top. The aroma is of brettanomyces and red wine. I'm tasting brettanomyces, red wine, vanilla, and caramel. The mouth is sticky, chewy, and dry.
