Oude du Blé is the Barrel-Fermented and Barrel-Aged expression of our tart Missouri Wheat Saison, Saison du Blé.

Fermented in French Oak Chardonnay Barrels and then aged on the lees for more than a year before being naturally conditioned in the bottle, Oude du Blé showcases a refined vinous character, a nuanced Brett influence and the signature Side Project acidity from our local microflora that inhabit all of our wild beers.

Poured cloudy yellow with a two fingers of white foam and blobs of lacing. Aromas bouquet is made of big stone fruit and oak, with sour citrus, floral yeast with white wine accents, and a touch of hay and barnyard funk. Taste is super fruity too, hay and now revealed light bretty funk on finish is lighter than nose with even more fruit with tropical and slight white vinous tones. Again very fruity in an artfully wild way! Feel is bright and well balanced with sour oak and yeast, funk is almost nonexistent. Very much enjoying on the porch on the late spring day though

750 mL bottle. Clear golden. Smells of strong oak, white wine, mineral notes. Tastes of strong white wine, soft fruity sweetness, lots of oak, mild acidity. Earthy yeasty back end. Medium light. Simple and very pleasant.

Pours a copper hue with a light fog and frost to it. One and a half fingers of white foam top it. Aroma is white grape, even from a distance. Raisins, fig, grassy, cellar stone, green apple, and pear. Mild dryness with a light funk. Flavor profile is white grapes, fig, jammy grapes, grassy hops, cellar stone, wafery, crackery malts, pear and green apple. Finish is tart, with the lead up weaving between sweet and funky. Mouth feel is crisp with an initial sharpness. Medium-thin with a sharp leading edge. Overall, crisp and refreshing with prickly sour notes for texture.

2017 vintage.

This one pours a hazy-ish golden yellow color, with a small head, and lots of lacing.

This smells like white wine, grape, grassy funk, lemon rind, floral character, and stone fruit.

This is definitely one of the better Side Project beers that I've had. There's a much more refined acidity than I'm used to with them, with a nice sweet and sour funk to it, lemon, floral sweetness, white grape, oak, grapefruit, etc.

This is light bodied, clean, and very drinkable, with a really refined and elegant feel to it.

This is as good as saison gets, really. This is very well done.

750ml bottle, "2018 vintage" stamped on the front label, poured into a stemless wine glass. Enjoyed on 07.02.2020, reviewed from Tasting Journal.

The beer pours a bright copper color, cloudy and bubbly with a fizzy white head that offers no retention nor lacing. The aroma is nice, super funky, sweet stone fruits, white wine grape, dry candied hop, crusty cereal grains, green apple skin and loads of wildflower. The flavors are good, quite floral with a nice punch of funky white grape, chewy oak and tart and tangy citrus while there is a nice peachy/apricot layer of sweet stone fruits and berries and lingering pale dough and mineral water. The mouthfeel is good, lively, crisp, coating with a nice medium body and a tart and dry finish.

Verdict: A very nice funky saison from Side Project. It's not as bracingly sour as many of their wild beers tend to be, which really lets the nuanced layers of flavor come to fruition.
