Notes / Commercial Description:
Imperial Stout aged for 2 years in 12-year-old Willett Bourbon Barrels & was then racked to Port Wine Barrels for a second maturation of 3 months. After bottling, Double Barrel Derivation conditioned and aged for 8 months before its release.

Had this along with the entire set from Derivation 1 to 6 at the Tasting to Sink all Sea Shepherds at St-Gilles Moeder Lambic cellar. Acquired from Cory. Thanks a lot for letting this full horizontal become reality.
A: Pours exactly the same as the other Derivations, that is to say pitch black with some dark lacings on top.
S: Smell highlights more alcohol than the rest of the series, with chocolate, oak and molasses.
T: Taste is also quite alcoholic, with dried fruits, roasted malts, chocolate, wood, molasses and faint vanilla. The alcohol kick is massive but I would say it's still well integrated.
O: High body, smooth and chewy mouthfeel.
O: The last of the series we had this day. Alcohol was more noticeable than for the rest of the series (except maybe from Derivation 3). It would certainly benefit from extra ageing. Yet it is already a very good beer.

5 oz. pour during the Side Project Brewery 1 year anniversary celebration. What a treat! There is a sweetness to this brew, but I can also pick up on the Port barrel addition, which is crazy considering how little time the beer was in that particular barrel.

L: Pours out jet black with minimal to no head.

S: Huge Barrel almost all I could smell it was overpowering.

T: Bourbon, raisins, subtle vanilla notes finishing with some sweetness from the port barrels.

F: Thick and unbelievably smooth

O: this was my third of the Derivation series and that's exactly where I would rank it. I think 4 and 5 were better.

Pitch black, almost zero head. Raisins, plum, bourbon, booze on the nose. Taste more of the same with strong port barrel flavors. Quite sweet. Thick body without being syrupy, smooth and creamy, very low carbonation.

Consumed half a bottle at the cellar before the Oude du Ble release yesterday.

Look was going to be 4.25, but I'm giving bonus points for the label, which is textured yet minimalistic. So alluring...

Aroma of dark candied fruits--the port is evident here.
On the tongue it brings some vanilla, cherry, molasses, then finishes with the port. I really never got the whiskey.

This is a sweet beer--not quite Bruery stout sweet and not under-attentuated, but it takes some adjustment if you're not used to consuming a bunch of sugar. The last notes of the port barrel do help dry it out a bit. That said, there is a balance among the component flavors that's very impressive.

Carbonation is almost non-existent, as was the case in D4. I prefer more bubbles in my beer, even in these big stouts. Full mouthfeel though.

A great imperial stout for sure. I'd put it in the middle of the derivation lineup. From most to least favorite in the series: 2, 1, 5, double barrel, 4, 3.

S: big barrel, all barrel, very powerful
T: like the nose, all barrel, bourbon at first and finishes with the port barrel. Great beer!
F: thick and smooth.no alcohol present
O: the best non adjunct ba stout I've had. D5 is better
