Clear burnt gold with a soft, tall froth.

This one's musty, dusty and nutty on the nose of oak and blue cheese funk accented by grapefruit.

Taste is tart riesling grapes and yellow apple accented by hay, straw and light minerals finishing semi-dry with an apricot exhale.

Pours a bright copper color with a clear transparency, just a bit of fog to it. Head is a finger of white foam that retains decently well. Aroma is cellar stone, biscuity and wafery malts with lemon zest and then green apple, dry pear and green grapes draped over the top. What starts as a standard saison evolves into a lightly tart white wine. Flavor profile is green apple, dry pear and green grapes with cellar stone, lemon zest and wafery malts beyond. Punchy dryness meats punchy tartness, both of which hit quick and then recede, exposing the underlying saison. Balance is good, with the first hitting just hard enough to be counterbalanced by the saison effectively. Mouth feel is crisp with a refreshingly dry and tight effervescence texture each and every sip. Thickness is medium. Overall, crisp and refreshing with punching notes that strike outside of the saison norm, this is a refreshing and unique twist on the style, while still coloring within the lines.

Served in a 15.5oz Speigalau tulip from a 750mL bottle. Batch #4.

Bottled July 2016; drank 8/12/16 @ Golgi Apparatus.

Opaque light orange appearance.

Minimal bright white head; minimal lace.

Tart pineapple notes in the nose.

Medium thin mouthfeel.

Tart pineapple & peach flavors; not overly sour but your jowls will notice by the end.

Fruity yet challenging.

Pours bright gold going to orange. Very hazy. 1 finger chalk white head and moderate lacing. Heavy aroma of lacto, brett, and oak. Grain and musty straw. Mild citrus. Taste much like the aroma. Heavy wild, funky notes. Some darker fruit notes. Vinious. Mild mouthfeel with crisp carbonation. Extremely sour and acidic. Another great beer from Side Project though the acidity could be taken down a notch or 2.

750ml bottle, Batch #1, poured into a FFF mini snifter. Enjoyed on 9.4.16, reviewed from Tasting Journal.

The beer pours a bright golden straw color, hazy and cloudy with a thin white head that has good retention and leaves a nice amount of lace behind, clinging to the glass. The aroma is nice, very tropical and fruity, strong funk, wood, red wine acidity, straw, grain and a bit of spice. I was surprised at how fruity and tropical it was on the nose and how quickly it translated to the flavors, tons of pineapple and tropical fruit, acidity from the puncheons, chewy oak, earthy wood, prominent funk and a signature Side Project yeast character, mineral water, light cereal grains with a nice floral bouquet as well. The mouthfeel is crisp, with a medium body, very lively carbonation and a thin finish that is snappy and tart.

Verdict: A very nice puncheon saison from Side Project, certainly one of their more complex beers to date, very bright and a delicate. It's quite refreshing, a touch of tartness, a touch of dryness but at times it's a bit acidic and just don't pop the same way that the Chardonnay aged version does.
