Notes: A blend of the following:

2014 - A mash bill of 65% pilsner and 35% unmalted wheat that was turbid-mashed and boiled for three hours with hop pellets. Inoculated with Barrel #40 and fermented in and aged in two neutral Hungarian oak 500L puncheons.

2015 - A mash bill of 65% pilsner and 35% unmalted wheat that was step-mashed and boiled for two hours with aged, whole-leaf hops. Inoculated with cultures from the 2014 brew and fermented in and aged in two French oak 500L puncheons.

2016 - A mash bill of 70% pilsner, 20% unmalted wheat and 10% malted wheat was single-infusion mashed and boiled for two hours with hop pellets. Inoculated with cultures from the 2015 brew and fermented in and aged in two French oak pinot noir 500L puncheons.

I'm in love. Blended 2017 by Side Project Brewing. A blend of 1, 2, and 3 year old Missouri wild ales. Funky peach, lemon sweet tart, oak, and a blend of fruits that come and go. Just tart enough to let the funk shine. It's an American Gueuze for sure, and done so, so right. I love it, but I'm sad to see it go.

essentially american gueuze, this is among the best side project beers i have ever had of any persuasion, and fully worthy of all the accolades it has received! this is incredible beer, a blend of 1, 2, and 3 year wild ales aged in oak. white and red wine elements to the nose, insanely mature funk, a solera sort of inoculation from what i understand, this yeast mix is insane. i get heaps of fruity brett, pear and apple and apricot notes, with some nice bacterial sting too, iodine, oak, and aged hops, really lambic-esque, developed, and complex, i could sit here and sniff on this all day without taking a sip, my mouth waters enough to satiate my thirst, its unreal. the flavor is just as good as the nose, a lemon lime soda complexion real quick followed by a raw wheat cereal character and a pils malt crackery element that is more robust that i am used to in belgian lambic, but still understated and appropriate, i want to taste the grain in a beer like this, and i certainly do here. the yeast drives it of course though, fruity and tannic, with the oak and wine elements alongside. layered bretty maturity, musty basement, wet straw, dog funk, and wood, sounds weird but tastes amazing. the sour side is moderate in acidity but really interesting in flavor with a cutting lemon element. slight cherry for a second, must be some red wine wood here? not all the way dry to finish, this takes awhile to fade out, which is just fine with me as it tastes incredible. awesome carbonation too, i love a beer like this that is alive and not still, whatever tradition says. an expensive bottle at the cellar, but i have come to know that you get what you pay for in here, and i have never regretted bucking up for a crazy side project beer. this is among their best work, and among the best american lambic types in existence. just about full marks here from me!

375ml capped bottle, served in a Side Project snifter glass. Pours a lighter golden yellow body, creamy one finger white head, good retention, lots of lacing. Smell is a rich cheesy funk, lemon and citrus zest, light-medium lactic acidity, mild oaky presence, touch of leather. Flavour is a nice lemon tartness, citrus zest, slight grainy sweetness, rich leathery funk, a fair bit of vinous character. Drinking this after SdF b1 and Tete de Cuvee, I am absolutely willing to say this is a fairly similar to these two in terms of the cheesy funk and wine barrel character, and I really don't think this is any major step down from these two. This also works better if you think of this as a blended wine-barrel aged saison, rather than a blended wild ale.

A - Looks just like most non fruited BA Saisons/wild, straw color fairly opaque towards the bottom of the bottle, medium to little lacing, nice head retention

N- Aroma is funky horse blanket though not as much as say drie or cantillon, but plenty to complete with other american beers in the "Methode Gueuze" Style. Citrusy lemon with a bit of stone fruit the lingers on the nose with more dominating characteristics of white wine grape must

T- Lots of lemon on the tongue. Funky but not as strong as the nose. Horse blanket. White grapes and must on the finish again with light notes of stone fruit. Compares loosely to SdF.

M - Medium body and fairly smooth. The downward trend of less perceived acidity continues, nicely balanced.

O - A beer that I will stock up on and crush over the next couple years. This will age gracefully

Bright saturated gold with sharp clarity, ample foam and lacing.
Rustic complex aroma, lightly acidic, lots of oak and light wet hay funk.
Big tannins, lightly puckering soft sourness, lemon rind and oaky vanilla.
Medium bodied and smooth, soft and even carbonation. Very well balanced.

White head. Straw yellow color.

More sour and tart than a gueuze for its age. Lemon citrus. Wet oak. Funky. It does taste a lot like a gueuze for it being from the states. I am very surprised by this. Stone fruit with some minerals. Wet basement.

Light bodied. Nice carbonation. Ends dry.

This was really well done. Very impressed with how close this tasted to a gueuze. Really awesome AWA.

Pours pale gold with some haze. Appeared to be a decent amount of sediment on the bottom of the bottle which likely caused most of the haze. 1 finger white head is rather airy. Moderate retention and lacing.

Aroma is funky and citrusy. Lemon, straw, and horse blanket. Some oak. Has an acidic edge to it.

Lots of lemon on the tongue. Funky but not as strong as the nose. Horse blanket. A bit of malt, very light, wheat crackers. Straw and gooseberries(?).

Medium body and fairly smooth. Funk with mild tartness that grows a touch as it warms. Lots of citrus, up front as well as lingering. Medium carbonation.

Really superb beer that lives up to the SP standard and then some. You could convince me this was fruited with lemons.

375 mL bottle. Hazy orange. Smells of oak, lemon acidity, something like white wine, dried grass, and stone fruit. Tastes like sour peaches, aggressive lemon sourness, grainy malt character, a little white wine in the finish. Quite sour, but just short of too much. Excellent.

Trying to get caught up on ratings. Wasn't a huge fan of this. Pucker factor was very high for me and really took away the other aspects in the beer.

Poured as a nice looking Yellow color with a fizzy white head on top. The smell is pretty funky along with some citrus in there too. The taste of the beer follows the nose, lemony citrus funk. The feel is light bodied, sharp and crisp. Overall a very nice beer.
