Notes: For the 2017 harvest, we selected Vidal Blanc grapes from Noboleis Vineyards in the Augusta AVA along the Missouri River, located 32 miles west of our brewery. For this project, we used the same malt bill as our collaborators and co-fermented the wort with the must of the Vidal Blanc grapes. We then took inspiration from the process of making orange wine, allowing the skins to stay in contact with the hybrid as the native microflora from the must and our Missouri cultures used in our brewing co-fermented the hybrid. After 2 weeks in stainless, the hybrid was racked to French Oak 225L Barrels and 500L Puncheons and aged for 11 months before being naturally conditioned in the bottles and kegs.

Nose is like a tight, cool glass of white wine. Tons of grape skin, golden raisins, oak and warming alcohol. Flavors of white grape juice, green apple, and mouth-watering oaky chardonnay grapes.

375ml bottle, served into a SP stemmed glass. Pours a cloudy golden yellow body, lemon hued, one and half finger frothy white head, great retention, a touch of lacing here and there. Smell is moderate lactic acid though not particularly yogurty by any means, big white wine grape, a bit of that lemon acetic acidity, a dab of oak, leather. Flavour is a big tart lemony acetic bite much like the yellow sour patch kid, but with a more nuanced white grape fruit sweetness that is a bit dry; there is also a bit of dry oak to it as well. Mild leather that isn't astringent, more of a mild grape skin/must flavour and bitterness on the backend. Pretty nice. Mouthfeel is medium bodied, good carbonation, a bit creamy and lactic despite the dry grape must flavour on the backend, it works quite well here. I think that the concept behind this is fascinating and certainly displays the grapes well.

From bottle into Side Project chalice. Bottle purchased at Side Project. Clear, yellow appearance with foam that dissipates quickly from the glass entirely. Floral and barnyard funky aroma. Apple and white grapes in the flavor, along with some barnyard. It is dry, with a tart finish.

This one pours a light hazy yellow color, with a small head and lots of lacing.

This smells like sweet citrus, oak, grape, vanilla, and funk.

This was a wonderful smooth sweetness and a light tartness. There’s some definitely tropical fruit, and lots of sweet grape flavors. There’s sour orange and light lemon, some creamy vanilla, and a nice oakiness on the back end.

This is drinkable and slightly creamy, with a clean finish.

This is a nice little beer for sure.
