Notes: This is the third release of a beer we blend from some of our finest and oldest barrel-aged Missouri Saisons and exemplifies the pinnacle of our Blended Saisons. Named after the top of the range of a specific house or grower’s champagnes, our Tête de Cuvée showcases our best barrels, blended purposefully for quality over quantity.

For Tête de Cuvée Vintage 2016 we selected and blended the following barrels:

Oude Fermier - fermented in and aged in a neutral French Oak barrel since 9/28/16
Oude Fermier - fermented in and aged in a Chardonnay French Oak barrel since 10/18/16
Oude Fermier - fermented in and aged in a White Burgundy French Oak barrel since 12/28/16

We spent a lot of time tasting through our barrels of Oude Fermier (our spelt Missouri Saison - Saison du Fermier - that sees extended aging time in oak), trying to construct what we wanted this blend to taste like. We drew inspiration from Blend #1, for its billowy, layered and expressively nuanced palate experience, and from my favorite Grand Cru Chardonnays from Burgundy, for their soft, round, delicate oak, lively acidity, and luscious mouthfeel. As with the previous releases of Tête de Cuvée, we blend this beer to enjoy now or to age gracefully for years to come.

Tête de Cuvée Vintage 2016 was bottled in early August of 2018 and has been bottle conditioning now for 8 months before we have decided it is ready to share.

750ml bottle, white wax, Side Project stemmed glass. Pours a mildly hazy golden orange body, one finger thick white head, frothy and lively, good retention and even a little bit of lacing. Smell is tart green apple acetone, stonefruit, moderate acetic acidity, a bit of white grape must, lively damp oak, a touch of leathery brett, a dab of oak and vanillin. Nice complexity which follows on the palate, big smooth acetone, mild stonefruit, moderate acetic acidity, grape must, damp oak, a very slight touch of wet leather. The acetone (and I have to stress that this is a good flavour of acetone) coats the palate really nicely, complemented by the damp oak and a slight grainy sweetness. It's reasonably complex, not quite the magic of blend 1, but it has a fairly robust character behind it. Mouthfeel is wonderfully medium-full bodied, coating the palate with a nice acetone and a fair bit of complex leather- but without the typical dryness of the brett. Certainly rates better than Vintage 2015 in my book, but doesn't quite get close to the magic of Blend 1.

Wow, yet again I'm shocked to see such a difference between this and the previous blends. Having this after enjoying a 2015 and a b1 on site at the Cellar, this has a distinct apricot note that I did not get with the others, while also having a wild herbal character and a more funky, pungent and sharper citrusy note. The feel is a bit thicker, as seedy funk and even a resinous hop presence accents. This is the most sour of the three at the moment.

poured from a 750mL bottle into a stemmed bulb glass on-site at the brewery tasting room. pours a hazy golden orange. soapy white head that dissipates but never fully disappears. white bubbles hang around throughout the entire pour. smells of strong oak, white wine and slight white grape must. taste is similar with the oak adding layers and layers of complexity. the oak lends a dryness to the mouthfeel, which is very soft and pleasing on the palate. overall, this isn’t Oude Fermier but it’s damn close.
