Bourbon barrels, cognac barrels, rye whisky barrels... apparently building an impressive barrel aged stout comes in phases. Side Project teams up with the brewers of Phase Three to establish a rule for these sort of things.

Jet black, inky and pouring like tar, Phase Rule hits the glass with brandy-like legging and a rather still swirl of the glass. As its surly, spicy and seductive scents of booze soaked sweetness, coffee, cocoa and maple swoon the nose, its taste starts off sweet with bittersweet chocolate, dark roast coffee, light cream and toasted molasses.

As its sweet and smoky char layer on the middle palate, a full saturation of mocha reveals hints of pitted fruits with cherry, grape and plum with a rounded taste of cognac. The spiciness of rye and oak start to dry the late palate with its earthen grit and its husky char. But the bourbon barrels provide extra coconut, vanilla, char and caramel as its warming finish soothes the senses.

Full bodied, richly textured up front but fading into a spicy, warming and simmering smokiness as the stout dries to remarkably drinkable status with a long extension of barrel spices and balancing bitters.

500ml bottle at share. Near black pour, slick, flat. Boozy aroma, roasty. Taste is toasty malts, sweet, light chocolate and late booziness that brings the heat.

poured from a purple-waxed 375mL bottle into a SP LC tumbler. pours a thick, pitch black with virtually no head or foam to speak of. spirits’ barrels and dark chocolate galore on the nose. taste follows with a beautiful expression of rich chocolate, oak, cognac and bourbon as well as faint vanilla and even some dark fruits as it reaches room temperature. thick, full mouthfeel. this one was a stunner. all the barrels play their part and the base stout is chocolate forward with a dry, dark fruit finish. loved it.
