Notes / Commercial Description:
Brewed in collaboration with Fonta Flora - this is a Piedmont-style Kvass made with rye sourdough bread from Chicken Bridge Bakery, grapefruit, local fennel and foraged pine needles.

As to the unique smell, this is coming from the yeast, we used the same sourdough starter that the bread was made with instead of a typical yeast strain.

I've never had a Kvass before but this is tart and I expected it to be sweet. This is super tart. It is definitely interesting. Smells a bit like sulphur and tastes a bit like tart sulphur. it gets better as the palate adjusts. Taste also has some citrus and pine.

A: The beer is hazy yellow in color. It poured with a short white head that died down, leaving a layer of bubbles consistently covering most of the surface.
S: Moderate aromas of sourdough yeast are present in the nose along with hints of lemons and grapefruit.
T: Similar to the smell, the taste is sour with notes of sourdough, notes of citrus, and hints of fennel.
M: It feels light-bodied and tart on the palate with a moderate amount of carbonation.
O: This beer grows on you—initially it starts out smelling like sulphur but then it smells more like sourdough yeast. The taste is rather complex, especially for the style.

A: Pours a very lightly hazy pale straw yellow in color with moderate to heavy amounts of fine active visible carbonation rising from the bottom and faint medium golden yellow colored highlights. The beer has a finger tall fizzy foamy white head that reduces to a medium to large sized patch of very thin film covering a little more than 50% of the surface of the beer and a thin ring at the edges of the glass. Minimal amounts of lacing are observed.

S: Initially there is a slightly stronger than moderate aroma of sulphur which fades somewhat as the beer opens up. That is followed by light to moderate aromas of citrus/grapefruit zest, sourdough, fennel, and pine.

T: Upfront there is a light to moderate flavor of slightly spicy rye + sourdough malts with only a hint of sweetness. That is followed by a light to moderate sourdough yeastiness and a light amount of lemon tartness. Light to moderate flavors of citrus//grapefruit zest, fennel, and pine are present as well. There is an overall light to moderate amount of tartness that lingers through the finish.

M: Light bodied with moderate amounts of carbonation. Light amount of acidic prickliness.

O: Enjoyable and easy to drink with a bit more complexity than is often found in the style.
