Corked and caged 375mL bottle from the brewery. No bottling date but this was released 8/23/2015. Served in a Three Taverns abbey goblet.

Pours a hazy pale orange with less than an eighth finger of quickly dissipating white head. A razor thin halo remains but no lace manages to stick.

Smells delightfully tart and funky. White wine, barrel funk, vague fruit and a little hay. That may not sound like much but its quite nice.

The flavors are deliciously wild. Tart grapes, oak, mild peach, faint earthy must, leather and hay. The tastes blend and transition smoothly between the earthy, tart, fruity and funky notes. Multifaceted and thoroughly enjoyable.

Semi dry, medium light body with slight carbonation. Finishes with some tart stone fruit, hints of wine and a little earthy must.

After two years of putting out some great Belgian styles Three Taverns flexes their muscles in a whole new way with Inceptus. This is a really well made wild ale and on par with the releases from several breweries known for quality American wild ales. Well worth the effort to pick this one up.

12.7 ounce bottle - $16.99 at Total Wine & More in Kennesaw, Georgia.

Appearance: Pours an everso gently hazed, light golden body. Some lightly yellowed, off-white suds on the pour, but they fade out pretty rapidly.

Smell: With a charming tartness and an engaging though moderated funkiness, it's additionally accented with fruit hints of apricot, apple and vinous wine.

Taste: A soft hewn hay, straw-like maltiness, fairly dry, with fruity hints of orchard fruits as well as lightly oaky, lightly puckering red wine from the barrels. Leisurely drying nearing the soft finish.

Mouthfeel: Light-bodied. Spritely though subtle carbonation.

Overall: Delicate, enjoyable.

Multiple 4oz pours at the Three Taverns Second Anniversary event.

A - Pours a hazy yellow, slight white head.
S - Nice lactic/acidic fruit tartness to the nose. Hints of earthy barnyard funk.
T - Nice sharp acidic tartness and stone fruit (peaches predominately). Balanced with some malty wheat undertones.
M - Medium body, good carbonation (not too zesty). Drinkable.
O - Very pleased with Three Taverns first sour offering. Light, refreshing, just the right amount of sour. Easily my favorite beer of the day. If I had to nitpick, I'd say it could use a touch more complexity, but that's reaching. Hopefully this comes out in bottles or some format I can get my hands on.

look: slightly hazy peachy-orange. Moderate white head on the pour that entirely dissipates.
smell: Civilized tart and funk. Citrus and fruity with some white wine notes.
taste: Much like the nose. Lots of flavors but deceptively subtle. Damn tasty I mean.

"We called it 'the perfect day for open fermentation.' As the city froze in December of 2013, we opened a fermenter to the cold, crisp air... and were rewarded with our own wild-caught yeast strain. Meet Inceptus, the first born of our Georgia wild series. Spontaneously fermented Inceptus [Latin for "beginning"] is a wild ale of remarkable complexity. Imbued with our own wild Georgia yeast strain and matured for months in North Georgia wine barrels, thus American sour will make you pucker with delight." Brewed in the style of an American Wild Ale fermented with wild Georgia yeast strains, aged in wine barrels. Available in 12.9 oz. bottles and on limited draft.

Poured from a 12.9 oz. bottle to a tulip glass.

(Appearance) Pours a crisp, fizzy head of a pastel white over a moderately hazy pale amber body. Retention is poor and there is no visible lacing. 2.25

(Smell) Modest aromas of tart, acidic wild yeast notes with a gentle funk against a simple, very dry pale malt aroma with a light sweetness. Fruit notes of white grape contribute to the perceived acidity of the beer. Potency is moderate. 3.75

(Taste) The flavor largely follows the aroma, with a moderately tart and acidic yeast profile against a clean, light malt body of pale malts, very dry with a low sweetness. Some very evident vinous and drying oak characteristics from the barrel aging. Finishes dry with a soft lingering tang, tannins and acidity. Enjoyable, and solidly built. 4

(Mouthfeel) Texture is slick, silky, clean, moderately acidic, very dry. Carbonation is mild, generating a mild frothiness and a lightly crisp finish. Body is light for the style, light/medium overall. Balance is slightly tangy, acidic and funky over sweet. Alcohol presence is low and there are no off characters. 3.5

(Overall) Overall about as unpredictable as a wild ale could be, this was largely enjoyable with the slight caveat of being a bit too dried out, likely from a combination of the malt bill, the fermentation behavior of the wild yeast and the wine barrel aging, all of which dry the malt backbone of this beer out, resulting in a clean, but distractedly underdeveloped malt profile with otherwise enjoyable flavor compounds from the wild yeast strain and the wine barrel aging. This was of the first release from 2015; Three Taverns has since rebrewed this beer, harvesting the same yeast strain while maintaining control of the ingredients going in otherwise. This will likely make for future iterations of this beer to be even more enjoyable as they dial down the winning combination for this recipe. In its current stage, it's surprisingly well off, and I'm very proud of my Georgia wild yeasts out there for their participation in an enjoyable beer. 3.75

this is a lights out wild ale, really incredible beer, lamic-esque in its wild maturity, spontaneous and rustic and funky and all of it, just enormously well done, and the red wine barrels add a lot to this. one of the surprises of the year for me, i hadnt had much experience with these guys before this one graced my presence, and wow, im blown away. it is light and wheaty and wild, more interesting and distinct and nuanced from a yeast standpoint than i could have anticipated, fermented down to dry, wrapped warmly in oak, not too acidic, and packed with red wine tannins and fruitiness. the cherry and blackberry notes from the wine work weirdly but brilliantly with some of the fruity yeast notes, which include lemon peel, dried apricot, and white grapes as well. layered to say the least, as pungent and unique in the aroma as it is in the flavor. light vanilla and malt sweetness for a second, a prickle of harsher acidity, and a sort of aged hop and wild bretty thing happening that teases lambic to my senses. gorgeous beer overall, carbonated perfectly highly, and with flavor turning instantly to fond memory on the swallow of every sip. i have to track down more of this, and i see a blueberry version listed too! sign me up! really next level wild ale here...

Almost entirely flat. Smell and flavor are both great guezesque but the lack of more carbonation is unfortunate. A tad lighter than some other similar offerings but that's not a bad thing. Reminds me a lot of some other breweries first attempt at a wild such as Funk Factory Dweller and that's not bad company to be in. The small bottle was over far too soon even split just between two people.

Zero carbonation, head retention, or lacing. The wild yeast hide any off flavor or aroma, and it is a good flavor profile, however I suspect a corked bottle
