Corked and caged 750mL bottled acquired at the brewery's 3rd anniversary party 7/23/16. Served in a Three Taverns snifter.
Pours a bright but hazy rose gold with a little more than a finger and a half cap of dense white foam. The head gradually fades to a smooth haze of retention and a broad halo, leaving some impressive swaths of lace on the way down.
Strong cabernet shines through in the aroma. That vinous character is complemented by some vaguely spicey phenols, apple skin, wet wood, soft banana and a general sweetness.
This is a delicious blend of cabernet, clove, apple skins, white pepper, Belgian yeast, mildly earthy wheat, faint banana peel and a slight nip of alcohol.
Medium full, almost creamy body with pillowy carbonation. Canernet and white pepper spiced apples dance on the palate in the finish.
Three Taverns continues to put out some of the best American brewed Belgian styles available. I'm not sure if their second anniversary tripel, Anniversarium, was used as the base but 3 is bursting with depth and flavor. I hope this hits local distribution so I can grab more.
