Binny's - Willowbrook

Batch #23

Austere shows incredible frothiness right off the bat with tight bubbled foam that becomes immediately dense and packs half the glass in all its craggy, meringue-like glory. There is no sign of this foam receding at all but parts do settle making for a rocky appearance. The body is pure golden with constant carbonation refreshing the head. Elbow grease will be the only thing to remove foam from glass. A great looking beer!

This seems to be a yeast driven saison. Bazooka Joe and white pepper lead the way with a nice intensity. Grassy noble hops make for the bitter component and orchard fruits piece together nicely. Pear and soft green apple play nicely with the white pepper. The bubblegum adds some juiciness while the grass balances. The malt presence is softly sweet, clean, and leans toward sugar cookies. I like where this is going.

Orchard fruits steal the show. Gritty pear and soft green apple again are met with peach this time around. Sugar cookie malt adds a touch of sweetness while the esters fall in line with more balance than the nose suggested. White pepper adds a touch of spice on the swallow but the bubblegum, though soft, runs throughout. The grassiness seems to have been lost in transition as well. The flavor is very nice, fruit forward but not as bright as the nose.

I've had two beers from Une Annee, both saisons, and they have carbonation/mouthfeel dialed in. It's frothy, a bit airy even, like some of the best Belgian saisons. The weight is medium but the effervescence makes it feel light and extremely drinkable. Alcohol is nonexistent. This guy could, and most likely will, be dangerous.

Austere is a damn fine American made saison. Carbonation, which is so important, is dialed in. The flavor profile is juicy and spicy; spicy in an enjoyable way with white pepper. The looks are up there as well, mostly from the great carbonation. I would pick this up again and at $7.99 probably will very soon.

Brewed 3/9, bottled 3/19.

Pale straw gold with racing carbonation, two fingers of sudsy white foam on the surface. Minimal spotty lacing around the edges, lasting surface coverage.

Grassy aroma with a soft note of orange custard and yeast esters.

Lightly bitter, slight clove and pepper spiciness, clean with a lingering earthiness in the aftertaste. Fairly peppery, medium bodied with ample carbonation. Overall it was a good Saison, with some light hop presence and yeast complexity.

Hadn't heard of this brewery before today. A hand-capped 750ml bottle. Tasted 21 Feb 2015.

Pours pale wheat yellow, clear from the top of the bottle, hazy from the bottom. Head is fluffy white and eruptive, forcing a slow pour and a long wait to drink the beer. It's pretty, but I'm annoyed, as I want to taste this, not watch the bubbles pop one by one.

Smell is bright and clean, floral and fruity. Has the flower-blossom nectar character that I love, and it blends well with a light spicy citrus. Yum.

Taste is crisp, grainy, and powerfully floral. It's much less complex than the smell, and that overpowering flowery taste is not totally working for me. It's quite good, but needs some tuning (certain elements up, others down).

Feel is light and definitely over-carbonated, as expected from the appearance. It almost works, as the fizzy buzz complements the flavors, but it's just too much.

A very nice saison. Outstanding smell. Clean, crisp, and fairly well balanced (except for the floral flavors).
