In what's about as authentic, traditional and risky as any beer can be, Grimm brewers seek out the natural lactic fermentation of their Berlinerweiss with a non-boil brew method to create a clean but dedicatedly sour taste and with a few brilliant hop surprises, in true American form.

Underneath the canary haze and spritzy cotton froth of Psychokinesis lies a strikingly piquant aroma of lemon, lime, green apple, gooseberry and a mild burlap must. Its earthy and tangy perfume precedes an initial bready-sweet taste of cookie dough and confectioner's sweetness.

But all that is short-lived as the sweetness dissolves mercilessly on the tongue and the sourness charges in. Then the character of warhead candied overtake the senses with a full on acidic but clean taste. Enough to make your face stick that way, the taste of lime, lemon, white grapefruit, honeydew, kiwi, gooseberry and bitter orange peel penetrate the tastebuds unapologetically. As the finish comes quick, the beer's oddly inviting hop bitterness rises to complement the growing sour seamlessly.

Bright and acidic, the beer's light but creamy body retains a bready body to buffer the sourness from the softer tissues of the mouth just enough for some slender reprieve. Yet, its palate-stripping sourness is refreshing, citrusy and clean as an aftertaste of wheat bread and yogurt continue to soothe and soften the late palate.

Appearance: Pours a cloudy goldenstraw, the fluffy head meringue-like in appearance; splashes of lacing

Smell: Very bright and juicy, with pineapple and grapefruit dominant; tart, passion fruit aromatics waft, as well

Taste: Juicy, up front, with the pineapple and grapefruit tones building in a lactic, tart direction; increasingly tart, with a passion fruit edge, through the middle; the finish brings in some underlying sweetness as the sour elements fade

Mouthfeel: Medium body with moderate carbonation; mid-range pucker factor

Overall: Very nice marriage between the lactobacillus and the dry-hopping

Pours a cloudy straw color / pineapple juice, soapy white head fades quickly to a thin ring, a few blobs of lace trailing down the glass. Smell: upfront are quick notes of lemon, lime and dried orange peel; herbal and a bit grassy, green pepper, mildly lactic with grainy and esthery notes. Taste: lemon-lime, tart melon, dried pineapple, a little brett C like action, green apple and slightly herbal finish. Lots of flavor, refreshing.

The smoothest, most drinkable beer I have ever experienced. The type of beer I could drink anywhere, anytime.

L : Blonde, golden yellow.
S: Strong funky and hoppy odors that pop out from the bottle and continue until the drink.
T: Odd mix of very dry hops with sour notes.
F: Very light overall flavor unlike many other I've had. There aren't any notes but just light dry hops at the end.
O: Excellent "light" beer that fuses hops and sours together in a unique way.

Sour, unripened fruits on the nose, with tart peach and grapefruit leading the way. Very similar on the tongue as the fruit is sharp, slightly puckering, with pithy bits of rind coming on, along with a green, grassy hop bitterness. Very solid beer.

Fairly grainy, with lemony tartness in aroma and a touch of musty funk.

Flavor is very lemony, with lactic and citric acid dominance and a modestly dry finish.

Bright yellow and cloudy.
It smells like lemon zest and papaya. Weirdly fruity.
Minerally and acidic and tart, like a white Bordeaux. This is utterly fantastic, and the tropicalities don't fade.
One of the better sours I've encountered of late.

From 07/11/15 notes. At The Jeffrey in NYC.

Pours a hazy, pale yellow color with one inch of bright white head and moderate carbonation evident. Nice sour fruits, citrus, orange, tangerines, and fruity malts. Medium body and low carbonation.

Overall a nice wild ale. Some sour fruits and lacto, worth checking out.

Served in a snifter at the Union Brewhouse in Weymouth.

Appearance: A one finger head was poured that reduced to a thin layer. It is a hazy golden straw yellow color with slight vision of tiny bubbles coming up through the glass. Spotty lacing down the glass as the beer was drank.

Smell: Citrus, tangerine, orange, biscuity, toasted, wheaty, and slight funk.

Taste: Tsngerine, grapefruit, orange, and citrus hops followed by biscuity, wheaty, and bready malts. Tart and sour notes, light bitterness, and chewiness throughout the whole glass.

Mouthfeel: Light bodied, medium to high carbonation, a little dry, tart, chewy, pucker, and light bitterness.

Overall: Got to admit that I like this beer more and more with every sip.

22 ounce bottle into tulip glass, bottled in 1/2018. Pours fairly hazy medium golden yellow color with a 1 finger dense white head with great retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big fairly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, passion fruit, papaya, mango, melon, guava, berry, white grape/wine, citrus peel/zest, hay, straw, herbal, floral, grass, wheat, and white bread dough; with lighter notes of pepper, banana, musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, citrus/tropical hops, and moderate pale/wheat malt notes; with great strength. Taste of big fairly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, passion fruit, papaya, mango, melon, guava, berry, white grape/wine, citrus peel/zest, hay, straw, herbal, floral, grass, wheat, and white bread dough; with lighter notes of pepper, banana, musty funk, and yeast earthiness. Light-moderate lactic tartness; light yeast spiciness and herbal/grassy hop bitterness on the finish. Lingering notes of tart lemon, lime, orange, grapefruit, peach, pear, pineapple, passion fruit, papaya, mango, melon, guava, berry, white grape/wine, citrus peel/zest, hay, straw, herbal, floral, grass, wheat, white bread dough, light banana/funk/pepper, and yeast earthiness on the finish for a while. Great complexity, robustness, and balance of fruity/funky/acidic yeast, citrus/tropical hops, and moderate pale/wheat malt flavors; with an awesome malt/tart/sourness balance; and zero puckering/astringent flavors after the finish. Light-moderate increasing dryness from tart/sourness and bitter/spiciness. Medium carbonation and body; with a very smooth, moderately bready/grainy/acidic, fairly crisp, and lightly sticky balanced mouthfeel that is fantastic. Zero warming alcohol as expected of 5%. Overall this is an excellent dry hopped sour/wind ale! All around great complexity, robustness, and balance of fruity/funky/acidic yeast, citrus/tropical hops, and moderate pale/wheat malt flavors; very smooth, crisp, and refreshing to drink with the modestly acidic/drying finish, not overly lactic. Mosaic, El Dorado, and Jarrylo hops. Balanced fruity/funky Brett/Lacto and juicy/dank citrus/tropical hops; with a nice wheat/pils malty backbone. A really enjoyable offering as expected.
