An uncompromisingly traditional and authentic Bavarian style wheat beer — GRIMM WEISSE! We’re so excited for this beer because it is rare around these parts to have an opportunity to drink hefeweissbier that is both LEGIT and also FRESH! This can-conditioned, double decoction mashed beauty is the culmination of careful study and research — a refreshing new direction in our brewing practice. Grimm Weisse pours with a translucent yellow haze and is topped with a pillowy, meringue-like head that lingers above the rim of the glass. The nose is enticing, with complex aromas of spice, banana, and lemon. The flavor follows the nose with a subtle and rich wheat tartness that enhances the beer’s supreme drinkability.
Live yeast lees are present in the can — you can choose to decant the beer off of the yeast, or roll/swirl the yeast back into suspension. At Grimm our preference is to decant, leaving the final half-inch of beer in the bottom of the can with the lees.

My first time with this one, and it does not disappoint. Not quite as hazy as many others (yeah, i swirled despite the brewer's notes), and a quick-fading head. Typical aromas, but the flavors really surprised me in a nice way. Excellent wheat malt flavors Very balanced, with a fairly crisp, clean finish.

I had this on draft 7/17/23 @ the Hopleaf.
Mostly opaque orange appearance.
Nice off-white head; almost no lacing remained.
Banana & mild caramel notes in the nose.
Medium mouthfeel.
Clove & banana flavors up front; mild booze heat notes on the finish.
Smelled better than it tasted; drinkable, but I won't seek it out again.

16 oz can. Pours hazy golden with tall, long lasting, fluffy white head, nice lacing and lively carbonation. Aroma is of wheat malt, spices and bananas. Body is medium and smooth. Wheat malt, bananas, green apples and spices fill the mouth. Finish is long and semi-sweet. Good brew.

Poured into a 20oz Hefe glass from a can dated 2/15/23.
Light yellow/white color and appearance with an airy white foam head.
Beautiful and clean nose throughout the entire drink and has all the classic hefe characteristics but is a bit more laid back and easy drinking overall

S: Classic weissbier aromas but super light.
T: Lemon zest, yellow grapefruit, very spicy, loads of bubblegum but no banana and also, somewhat unwelcome, cyder vinegar. A sour wheat beer.
F: Surprisingly light body, almost watery, with moderate to high carbonation.
O: Based on the reviews, and this brewery’s reputation, I was expecting a totally different beer. Plenty of funk but way too thin and oddly acidic and, frankly, a wheat beer that can’t hold its head is just wrong. Canned 6 weeks ago so not old. Is this a duff batch?? My hunt to find a top-notch hefeweizen outside a German-speaking country continues.

Dry and crisp with a very frothy and sharply carbonated mouthfeel. Malty, wheaty, with aromatic notes of banana bread, caramel, and general breadiness but it is certainly not sweet. It's pretty good, definitely active fermentation going on which might not appeal to everyone as there are some slight off notes, but I'll attribute that as the intent and not a byproduct. Very well made and unique Weiss, and unique in its strivation for traditionality rather than any sort of gimmicks. Pouring it reveals and extremely large and robust head, which is indicative of an active fermentation. So it's pretty fresh and good that it's a primary fermentation and not a refermentation. The body is opaque medium light yellow like pineapple juice, with very active carbonation and bubbles. I'm not big on the traditional style but everything Grimm touches is gold.

Pours a huge foamy 4 finger head with fair retention, hazy med golden pale color
Nose lots of creamy doughy wheat, cake batter and a little buttercake, a little yeast with lots of raw dough, a bit of vanilla, a mild citrus ester, orange cake and mild perfumey potpourri and spice,
Taste mild sweet malt, quite doughy bready, vanilla and orange cake, fair citrus esters, touch of bubblegum, light bitterness, some sweet orange zest, touch of coriander and potpourri spice, cake batter and a touch yeasty, general spice phenol notes, drier mild sticky soft finish
Mouth is med bod, soft creamy, higher frothy effervescent carb
Overall pretty nice
