Notes: An uncompromisingly traditional and authentic Bavarian style wheat beer — GRIMM WEISSE! We’re so excited for this beer because it is rare around these parts to have an opportunity to drink hefeweissbier that is both LEGIT and also FRESH! This can-conditioned, double decoction mashed beauty is the culmination of careful study and research — a refreshing new direction in our brewing practice. Grimm Weisse pours with a translucent yellow haze and is topped with a pillowy, meringue-like head that lingers above the rim of the glass. The nose is enticing, with complex aromas of spice, banana, and lemon. The flavor follows the nose with a subtle and rich wheat tartness that enhances the beer’s supreme drinkability.

Live yeast lees are present in the can — you can choose to decant the beer off of the yeast, or roll/swirl the yeast back into suspension. At Grimm our preference is to decant, leaving the final half-inch of beer in the bottom of the can with the lees.

Accidentally bought a 10/21 canning, so discount my review accordingly. YMMV.

Can from the brewery in BK. Pours a cloudy medium gold with a finger of foamy white head that sticks around, smell is brioche and wheat buns, almond paste, and taffy, hints of banana and clove, taste follows the nose with sweet doughy wheat bread, mild lemon cake, hints of funky bitter grass, finish is mild bananas bread, feel is medium bodied, chewy, dry finish. Crushable, sweet, chewy goodness.

This one pours a slightly hazy and very light yellow color, with a small fluffy head, and lots of lacing.

This smells like a rustic sort of wheat aroma, banana, clove, herbal hops, and lemon.

This is quite honestly one of the best American-made hefeweizens that I've ever had. It's just about spot on, with the perfect balance of yeasty characteristics - banana, clove, citrus, all the good stuff. There's a light spicy and lemony hop character.

This manages to strike a balance between being full and rich while also being bone dry and a little bit wispy. It's super drinkable and clean, with a very good balance.

This honestly blew me away. Grimm was clearly going for something impressive here with all the work they put into it, and it worked out quite nicely.

Can. Pale hazy cloudy straw with small head and a little lace. Light banana clove herbal mineral aroma. Medium sweet very light and fruity tart peach and apricot with very light herbal mineral mineral bitterness. Light and soft mouthfeel a tiny bit slick.

Pours a hazy golden color with hints of orange. Thumbnail length head retains well, lacing and carbonation visible.

Aromas of banana, clove and zesty notes of orange. The nose on the malt evokes gummy wheat and biscuit.

Smooth and creamy wheat malts, bready and doughy, nicely spiced. Fruity notes of banana and zesty orange are contrasted nicely by a gentle clove spice. Bitterness is minimal.

Medium bodied with a smooth and creamy mouthfeel. Finish is semi dry and carbonation is moderate.

Solid Hefeweizen overall. Refreshing and very easy to drink.

Poured from a can (02Jul2021) into a Weizen glass

L: pours a completely turbid, glowing light straw yellow (bottom) to fuller orange (top). Overall would call it ~5. Huge white head that fades slowly, leaves moderate lacing as it does. Despite being totally opaque see a steady moderate amount of visible carbonation, feeds a nice minimal head

S: those classic Hefeweizen notes shine through. Classic banana esters and clove phenols definitely present. There’s a slight sweetness to it, mix of malt and what I would say is the banana. Checking all the boxes here, excited to sip

T: swallow nicely delivers what the nose suggested. Banana and clove notes coming across nicely, that bit of sweetness that I picked up on the nose is more restrained on the swallow. Fruit and spice comes through together at the start, there’s a slight bit of malt but minimal. Nothing in terms of hops to speak of

F: medium carbonation, medium-/light+ body,. Mouth coating but not overly full, quick finish

O: a really great hefe, I’m definitely impressed. Delivers the nose and flavor you want, full flavored and refreshing

Another spot on Grimm execution. Bananas up front , spice on the back . Crisply carbonated. If you want a Hefeweizen this is a really good one. I’m surprised it isn’t getting better scores here. Not all beers are IPA’s and shouldn’t be judged as such.

Pours a hazy golden yellow color, ample foamy head. Great aroma of clove, banana, bubble gum. Flavor is banana bubble gum, nice ester flavor. Good carbonation. Overall a very good wheat beer.

Pours that hazy golden straw, may be a little richer than Allagash White in color, but also not as trubulent as an IPA. Tangy banana on the nose. It's got banana milkshake type vibes, though it is more tangy than what a banana milkshake is like. The weight provides some nice depth to the mouthfeel. Not much in the form of clove, but a lot of the funk that I get in a Bavarian Hefe like Weihenstephan. An excellent Hefe to be fair.

In my youth, I spent two summers living in Austria drinking only hefeweizen. I remember those days as some of my best.
One sip of Grimm heffeweissbier and I am transported back to those days in the Alps. Fresh meusli in the morning, ham sandwiches for lunch, and juicy noodles with meat at dinnertime. I also remember all the reasons that I was not a huge fan of hefeweizen. The annoyingly huge foamy head, a hint of sour, the smell, the color, all of the features are spot on.
The beers kept coming and before I knew it I'd spent half my entire paycheck on a night at the bar - fortunately room and board were included with my job! I'd stagger or bike home and wake up at 7am the next morning to lead a group hike or windsurf in the lake all morning. Awesome stuff if you like weissbier.
Roll or swirl the can gently to get the last bit of sediment from the bottom like a true weissbier enthusiast. ;)

A: The beer is very hazy yellow in color. It poured with a finger high white head that has good retention properties and consistently left a short head covering the surface and lots of lacing down the sides of the glass.
S: Moderate aromas of banana-like yeast are present in the nose along with hints of spice from the hops.
T: The taste follows the smell, except that the flavors of spices and yeast are a tad bit stronger.
M: It feels a bit more than light-bodied on the palate and has a moderate amount of carbonation.
O: The smell and taste of this beer is all about the yeast and has a nice mix of banana and spice.

L: A murky, hazy lemon peel/straw color with a tall foamy white head that slowly dissolves into thick film with lots of lacing.
S: Not much of an aroma, just some banana with a wheat background and a hint of lemon.
T: white peasant bread, banana, cloves, lemon zest, clover
F: rich and full, modest carbonation giving it a smooth and easy swallow
O: this is an excellent example of an American hefeweizen. Heavier and richer than the German counterparts. Flat out delicious.

Pours a hazy deep yellow, big 3" frothy head that very slowly recedes with great streaky lacing. Nose has classic tones of clove, yeast, dough, baking spice, and mild banana. Taste is spice-forward with lots of warming clove balanced by fruity yeast esters. Not a ton of wheat or grain character on palate. Mouthfeel is rather thick with small and light carbonation. Overall, great to have a fresh local hefe option, but this drink a little heavy for my tastes.
