One very fine and tasty beer

On tap at the brewery, (Abbey-style Tripel), 8% abv. A dry, spicy, and complex Belgian-style ale inspired by Trappists. Deep yellow and slightly cloudy in appearance. Aroma and flavor marked by the marriage of peppery spice, citrus, and pear. Noble hops assertively utilized to create balance. I'm not a big Belgian fan but this one rocked it.

A great example of the style, a traditional Belgian Style Tripel. Mellow spice notes that leave you wanting more. very complex and well done!

On tap at the brewery. Sampled on July 18, 2015.

It pours golden yellow with a modest white fizzy head that settles back and becomes a ring.

The aroma is alive with Belgian yeast, Belgian sugars, toasted malts, and spicy hops. Quite inviting.

The body is in the medium range,

The beer evolves like a good craft beer should with a pleasant toasty malt taste to start and then this peppery sensation really kicks in toward the end and hangs on as the beer finishes dry.

Pours a lightly cloudy golden color with a 2-finger bubbly white head. Leaves a nice ring of lacing around the top of the glass.

The aroma has quite a bit of yeast, as well as some bananas. The back end has plenty of sweet caramel and spicy dough. Just a faint whiff of alcohol. I also get a subtle orange character which adds a nice citrus dimension to the aroma.

The taste follows the nose, with some sweet citrus and bananas up front, followed by caramel and peppery spice. Has a subtle hop bite at the finish. Yeasty and bready, sweet and complex. Excellent flavor.

The feel is medium bodied with pretty good carbonation. Very smooth, and incredibly drinkable. Finish is lightly dry with a lingering hop bitterness. Alcohol is nigh undetectable on the palate.

Overall, an absolutely fantastic Tripel that hits all the notes you'd expect from a great Belgian brewery. It's amazing this is brewed right in my home state.

Fine, fine example of this Belgian style.

Beautiful microbead head; perfect levels of carbonation. Hugely impressive balance--no harsh alcohols. Spiciness mellows into hop presence/white grape/pear. Great yeast choice.

Try this beer with their local cheese plate when you visit. Otherwise, let's hope they bottle in the near future.

Wow. What a pleasant, taste-bud-zinging surprise. Belgium beware, these guys are gonna beat you at your own style!
A- Shimmery gold hue, practically glows. While unfiltered, it's a fairly clear beer, no obvious sediment or floaters. Head is small, but fluffy.
S- Mmmm. Fruity esters, field flowers, hint of orangy citrus.
T- Deceivingly smooth for 8.7%, gorgeously balanced, the Belgian yeast is clearly present but not overpowering. The biscuity taste of the malt is right there, but quickly gives way to a nice hoppy finish that is not overdone for the style. Clean finish, doesn't linger too long, makes you wanna take another gulp!
O- Okay, though not always my favorite style, this pour was one of the most enjoyable Tripels I have had. Ever. Fresh, true-to-style, and definitely worth making the pilgramage to Schilling for. I could have easily devoured 2 or 3 if not for the 1-hour drive home!
