Notes: Schilling is a progressive European-influenced small-batch brewery located in NH's White Mountains. 99% of Schilling beer is sold on-site in pints and growlers from the family-owned brewery in Littleton, NH, which is housed in a restored 18th-century grist mill on the Ammonoosuc River. The brewery's adjoining taproom also features gourmet wood-fired pizzas, in addition to other locally-influenced foods.

Oh, you know. Just chillin’ at Schillin’ Friday not working today to play waaaay up north. If this is what a day off from work is, I would like to sign up, please. Definitely not as ‘right off of 91’ as it looks like it is on the map, true; we were actually on 93 for a good bit. But no matter, we had nowhere else to be as we timed our arrival for shortly after opening. Littleton; off Main Street on that lower adjacent strip hugging the swelling rainy river…

The old grist mill building, enter in through the vestibule. Seemingly nooks and hidden spaced but only somewhat so. Black walls with framed panel windows, rafter ceiling with phat beams, uprights, & acrossrights, and worn plank floorings. Hightop off the entrance, a booth & a few tables riddled about, a 4 backed stool counter off the bar, and more counter seating there (me, pointing). Kitchen corner concealed but it’s there. Schilling logo piece, calendar boards, an old map, a growler display, and a White Mountain National Forest sign. Drop suction cup & wide pan lamps above.

To the left, a straight light wood single board topped bar, two toned horizontal plank base, and seating for 6 on wood backed chairs. That’s where we’ll be. Subway tile wall barback with 16 taps; 8 over 8 alternating with non-descript handles on a stainless panel. The end 2 are side pour as well they should be. Tag over each and tap selections printed on small slates in 2 rows above the taps (beer, style, ABV, pricing). Shelving racks to both sides of center holding glassware of all sizes, and single shelf shorty glasses below. Bottle/can board for the to-go on the end of the tap board, and a flatscreen cornered. Single caged drop bulbs over the bar.

16 beers up, 14 Schilling beers proper (Alexandr, Czech Pilsner, 5%; Landbier, Rustic Lager, 4.2%; Nordertor, Northern German Pilsner, 5%; Augustin 13, Polotmavy - Amber Czech Lager, 5.6%; Glimmen, Smoked Helles, 5.1%; Schalen, Unfiltered Hoppy Lager, 5.2%; Aostsa, Italian Pilsner, 5%; San Jacinto, Mexican Vienna Lager, 4.8%; Kaiserpfalz, Altbiier, 5.1%; Ziegenmensch, Maibock, 6.5%; Fabulant, Weizenbock, 6.5%; Adem, Witbier, 4.8%; Erastus, Abbey Tripel, 9%; Kamarade, Baltic Porter, 9%) + 2 Schilling Ale project Resilience offerings (Pompadour, APA, 5.6%; Combover, IPA, 7%).

The paper list giving beer, style, notes, ABV, & pricing for full pour pint or 12oz & shorty 6oz. I may have sampled a few. Started with Alexandr, Czech Pilsner & Nordertor, Northern German Pilsner side by side. The Alexandr is crisp and beautiful and the Nordertor is floral, citrusy, & hoppy. And then Aostsa, Italian Pilsner, very nice, biscuit, floral, cracker; Kaiserpfalz, Altbier, a maltface sweety; Ziegenmensch, Maibock, also malt sweet, with some alcohol warming there; Fabulant, Weizenbock, banananana, clove, deep plumminess love; Kamarade, Baltic Porter, rich & chocolatey; and we were just offered up shortys of Augustin 13, Polotmavy - Amber Czech Lager. Fuck! Toffee! Fuck!

Went on walkabout as I do… Side deck just past the bar holds 4 tables over the bloated Ammonoosuc River below, with views of the covered bridge and the water wheel of danger. And then upstairs, the sameish footprint there. Bar on the far wall, 9 tables and bar counter seating, and better looking around points, as you’re, you know, higher up. That’s how ‘upstairs’ works. Seating outside for those who are not amongst the fortunate sons who got here earlier and procured inside seating, and food truck action, too. The building next door to one side is the store & tasting room, and there’s something expansionwise coming to the building on the other side, too. Saw the store. No weizen bock bottles to be had today, phooey. Left the store.

Rainy April day well spent. The beers are good here. I mean really goddamn good (although I’m feeling like they’re served just a touch too cold). Great tunes. Christender today, knows his game. Polite, attentive, all that. Tell me more about these kitchenings, please. We did a North Country pizza; pepperoni, sausage, bacon, mozzarella, & red sauce due to the necessity of food. Did I mention the really goddamn beer happening here? Best goddamn brewery in Vermont (yes, jackass, I know they’re in New Hampshire. I’m saying that the best part of any Vermont trip should be dropping over the line to come here).

Visited on 9/15/2020 after leaving Flume Gorge and before our tour of the Great North Woods.

Vibe was rustic on the inside, cool and damp on a 60 degree day. It was a little too cool for us low desert dwellars to enjoy the outdoor seating including a back deck that had a lovely view of the local river.

Quality of the beer was very good as i had the dark lager and tripel and Da Boss enjoyed an authentic check Pils. Definitely legit decoction brewing method employed to make the lagers world class.

Service was very good as there were frequent fly-bys from the team there.

Selection was good with a nice cross selection of lagers, gose, and a tripel. THere were even some IPAs that were available as guest taps.

The wood fire pizza often produced a very good light, crispy, and flavorful pie. We had all 6 pieces and probably i could have had another piece.

Glad we stopped in as the boys in the New England thread talked this up as a good regional stop!

Beautiful property in a gorgeous northern NH town, right on a river with incredible views. Delicious beer, as expected, but the food at the taproom/patio across from the restaurant was amazing. Their chicken gravy poutine, fried chicken sandwich as well as the burger were all fantastic. Great bartenders who provided plenty of samples before making a decision. And lots of cans/bottles to-go. Some of the best lagers (and great hoppy beers) in the Northeast if not the entire country.

2nd visit here for us. What a great location and they are brewing some great beer. European styles, pilsners , German style lagers, but also imperial stouts and a triple, all good. Food was delicious - pizza, salads, everything seemed so fresh and delicious. I wish littleton was closer to our place near North Conway - but it is really worth the trip. They also have a taproom next door - selling cans and swag.

Wow! What a perfect setting, with great beers and food. A nice brewery/taphouse/restaurant perched above the river in an old building on the edge of a river at a former mill site. They brew some excellent European-style lagers and ales and have a very nice selection of food (the pizza was excellent and everything I saw come out looked just as good if not better). In addition, there is a tasting room and package store next door featuring small pours and growlers/cans/merch to go (this spot also has river overlook seating and is like a sister brewery or something along those lines. All-in-all this place is hard to beat and I will definitely be back.

Schilling is best visited during warm months, where the outdoor seating has a lovely view of Ammonoosuc River. Otherwise, it is definitely a bit cramped, but not uncomfortable at all. The bar is great for catching any games as well as watching the crowler process.

The pizza here is just fantastic, highly recommend Ranch on Fire if you're a fan of spicy foods and the warm pretzel as a starter is a must. They have gluten free options as well. While I don't typically go for European style beers, I do love that Schilling goes against the grain with their selections, it helps it stand out and makes it a fun experience. Though the menu does not change a ton over time, the emergence of their Resilience Brewing project offers some welcomed variation to the European draft list.

Highly recommend, everyone I've taken to has loved their experience there.

Such a cool place. The setting is really nice, in a old converted mill. Beers and pizza were top notch. Service was good, but food was kinda slow out of the kitchen on a Saturday afternoon. The owner came by and said hello. Nice touch. A real gem in the area.

First timers. Just a great place to hang out on a Sunday afternoon on the river. Great atmosphere. Lovely old building that was just made for a restoration to a brewery. A "don't miss it" beer stop if you are into beer trails. ** Second trip here in late July. Really looked forward to our trip two years later. New brewery is impressive. Location is still wonderful for the rehabbed old bldg. Food and service, oh yeah, the beer was great. Shilling will always be on our “hit” list of local breweries.

Amazing ride through notch to get up to this gem of a place. Located along a river, it's a cool venue in an old farmhouse type building. I think the bartender said it was built in the 1700s. Cool vibe, awesome building. Brewery focuses on European styles which is cool, but with it being so far away from anything else....I was wishing for a real good sour (the one they had was ok) and some good hoppy stuff. Side project by same brewers is intended to go after more american style beers such as IPA, but they only had a amber lager on tap from side project and that was a step up from Bud Light.

In summary, very cool place, good beer for the style but unless you love Belgian/German style beer, it may be a more of a place to stop by on your way to Hill Farmstead or kill time while vacationing in the lakes region rather than a "beer" destination. Downtown area was very cool too, so not a bad day trip.

No kidding. This might be the best brewery/pub I've ever experienced. Rustic, cozy space. Fantastic food (try the pizza, and everything else). Most of all the beers are simply world class. Short pours available so you can try the very broad range of euro-inspired styles. I can't wait to go back.

If you are ever in NH or VT for that matter, this place is a must visit. It is cozy and the staff is attentive and warm. The beers are all fantastic. The brewer John has nailed the euro styles. All of the lagers that I have ever had are as authentic as any I have ever had in the US. Their Belgian selections are also very authentic. It's a must visit for any craft beer lover!
