Bloody Butcher: Appalachian Grisette.

Brewed with North Carolina barley, rye, wheat and native Bloody Butcher corn thanks to Fox Farms of Burnsville, North Carolina. Bloody Butcher corn is a very unique, dry and deep red heirloom corn that was almost all but forgotten. Thanks to folks like Fox Farms and countless others, this beautiful corn is making a big comeback.

Pours a hazy straw color with a slight head and lacing
Aroma has yeast and floral hints
The taste follows the nose with a well balanced tart flavor
A light bodied well carbonated beer

Pours a beautiful pair straw with a thin head and plenty of active carbonation.
Smell hints at citrus blossoms and white wine. Subtle tartness, very inviting.
Taste is light and tart. With a refreshing floral quality and a berry like sour note.
Mouthfeel is crisp with prickly carbonation.
Overall this is tarter than I'm used to in the style. Definitely one to sip. Nice clean flavor and very refreshing. Wish there was some color from that beautiful corn, but can't win them all

Pours a slightly hazy straw color with a large white head that settled to a ring. Smells of barnyard funk, slightly sour, lemon, floral elements and a touch of honey. Taste is suprisingly sour with lemon and lemon rind upfront, corn, lots of barnyard funk, yeast, floral notes, Grammy Smith apples and lime. Light side of medium bodied, highly carbonated, very tart and dry.

Look: It pours golden and clear with a white head.

Smell: It is very aromatic. It has a strong spicy overtone to it that has a defined sourness as well. There are background notes of lemon and dough.

Taste: It is quite tart with flavors of rye, spice, sorghum, and corn being the most noticeable. There are background doughy notes with cracker.

Feel: It has a medium-light body with strong tartness through the finish.

Overall, a complex beer with several ingredients working well together without one single feature overwhelming the others.

Enjoyed on tap at the Dive Bar tap takeover.

A - Poured into a tulip a nice hazy pale straw hue with a thin white head that fades to leave thin lacing and light wisps.

S - Big aromas of barnyard hay, straw, little sorghum. Good almost orange blossom honey and some underlying sweetness. Very aromatic.

T - Taste is similar to the nose with loads of tart lemon and acidity. A surprising amount of tartness really. The hay and funk is there along with that telltale sorghum flavour. Little bit of rye.

M - Mouthfeel is lightly carbonated, little creamy. The tartness makes this finish though rather flemmy.

O - Overall this was a very interesting beer but the tartness really threw me for a loop. Enjoyable in the summer for sure.

a neat wild saison or grisette type brewed with a malted red corn, so interesting and agricultural, this is both the past and the future of beer in the same glass, which is one of the reasons i like and respect it so much, luck to have had this so generously shared with me this afternoon! it looks bubbly and holds its head well, pale from the bottle, more sedimented towards the bottom but never hazy or heavy. the nose is my favorite part, smells like the harvest of something, i get some rye spice, a dusty almost german grain character too, and some interesting wheat and corn malts, i like how rustic that makes it right away, even before the funky yeast i love these guys for, which is brett driven, lightly belgian, amazingly mature, and unique, not something canned and recycled and used by everyone, this belongs to them, and i live for that! the corn i think is more distinct in nose than taste, but it does lend something unique here, outside of yellow corn or a corn flour, its earthy as can be rather than sweet, awesome in a light saison type like this, floral for a second, protein rich, and also dry, bright, and drinkable. spicy but light, airy and clean, funky and weird, impossibly unique and sometimes quality leaps out of the glass in more simple beers like this, which is totally the case here. i want an infinite supply of this one. crazy underrated here for my tastes...

I had a pint of Bloody Butcher when I visited Fonta Flora on 4/20/18.
L - Poured a light yellow with a slight white head.
S - A slight lemon on the smell.
T - Slightly tart with a light lemon flavor. Really tasty.
F - Medium body and carbonation.
O - Really easy drinking grisette.

bottled feb. 2016

750 ml. green bottle poured into teku glass while wearing a fonta flora bloody butcher shirt

l-pours decent grey white head with an it's time to buy new pillows vibe, color is mostly dehydrated pee gold

s-saison dupont up front with that same level of fun skunk, started crisp but some almost wildflower honey sweetness into fruit leather minus the fruit/magic mushroom leather to finally a pepper spackled acidity that used to not be there

t-not overpowering but present tang on the swallow, just enough for one astronaut, very quick honestly having trouble describing much, like a quick zap of dry pepper-like complex unsweetened lemonade

f-high carb fills the mouth immediately lil slick with a slightly chalky finish

oa-chyeah but it was better with just a year on it...could be affected by my poor cellaring techniques
