Appearance: Pours a somewhat hazy amber color with a one finger brilliant head that quickly fades to a collar; splashy lacing

Smell: Lactic aromatics with persimmons, pear and tones; funky with tangy wheat elements and a peppery yeast aspect

Taste: Tangy wheat, lemon and peppery yeast phenols, up front, with hints of the sweeter fruit from the persimmon; funk and Brett tones, through the middle, with the tartness building through the finish; the persimmon sweet element lingers into the aftertaste, as well

Mouthfeel: J Medium bodied with moderate carbonation; slight degree of pucker

Overall: A lot of subtle flavors in this beer as the persimmon does not overwhelm

Poured from a bomber.
L - Poured a light yellow color with a white head.
S - Smells of tart lemons.
T - Tastes of tart lemons with some funkiness.
F - Medium body and carbonation.
O - Really delicious farmhouse ale. I'm regretting getting only one.

A: Pours a very lightly hazy medium to dark golden yellow in color with moderate amounts of fine active visible carbonation rising quickly from the bottom of the glass and faint bright yellow + amber colored highlights. The beer has a finger tall sudsy foamy bright white head that quickly reduces to a medium sized patch of slightly mottled very thin film and a very thin ring at the edges of the glass. Light amounts of lacing are observed.

S: Slightly stronger than moderate aromas of persimmons, pear, tart lemon citrus lacto and funky earthy hay-like brett with light to moderate aromas of vinegar + sour wheat malts with minimal amounts of sweetness. Hints of spicy/peppery saison yeast and grassy hops.

T: Upfront there are light to moderate flavors of sour wheat malts with minimal amounts of sweetness. That is followed by light to moderate flavors of spicy/peppery saison yeast, tart lemon citrus lacto and funky earthy hay-like brett. That is followed by moderate to strong amounts of vinous/vinegar acidity and moderate flavors of persimmons. Hints of grassy hops towards the finish. Aggressive tartness which lingers well through the finish.

M: Just shy of medium bodied with moderate amounts of carbonation. Slightly crisp. Moderate to strong amounts of acidic prickliness.

O: A very well constructed and aggressively tart mixed culture saison - very enjoyable but definitely more of a slow sipper than an easy drinker. Persimmons work very well in the beer.

a pretty special beer this one is, all of these wild fonta flora beers are, lucky i have been able to drink a handful of them lately. life is good! this one is pretty sour, but jazzed up with persimmon, a cool flavor with a mix funky and sour yeast profile, simple saison type underneath, a nicely layered and complex brew, gorgeous packaging too, it looks and feels fancy and special. pale in color, nothing there from the persimmon, strong bacterial lactic acidity in the nose, a little sweetness from the fruit, new zealand type fruity white wine, tannic and sharp, mouthwatering. persimmon is mild in the flavor, less than i expected it to be, but its distinct, obviously real fruit, its just that this is a little too sour for it to really stand out, i wish it wasnt so sharp, for one its hard to drink much of it, but secondly i think it takes away from some of the nuance, especially from the fruit. more of it comes out as this warms up, so i let it sit awhile. mellow funk, way more acid, lemon and raw wheat. its well refined, but so intense, kind of like rare barrel stuff is sometimes, too sour to be as interesting as it probably actually is, if that could be turned down it would be an improvement. the persimmon part is cool, and overall this is excellent beer, unique, but the over the top acidity hurts it on the whole.

Received in a trade. Shared with JLindros.

A - Poured into a Kate the Great tulip a nice lightly hazy golden hue with a thin white head that fades to leave thin wisps and a light blanket.

S - Aromas of nice tart lemony saison. Nice light funk, good phenols. There are excellent pear notes.

T - Taste is similar to the nose, excellent tart lemons, nice lighter pear. There is a very nice vinegar note almost vegetative but enjoyable.

M - Mouthfeel is lightly carbonated, crisp, clean.

O - Overall this was a very nice saison. Excellent fruity notes with nice saison balance. Super drinkable!

Light creamy fizzy head, very hazy, little lacing

Nose nice funk, floral grassy funk, little fruity, little acidic fruity lacto funk, grassy hay, little phenol spices, wheat, basic lemony fruity, nice esters fruity pear like.

Taste very tart, sweet lemonade and acidic, little flemmy, good funk level, big vinegar acidity, little fruity ester, pear note, mild wheat as grassy hay funk, nice lemon sour, flemmy tart finish.

Mouth is med bod, light carb, nice acidity and funk

Overall pretty nice, nose has great funk not enough lemon, Taste plenty of lemon but not as much saison or funk, but still a great beer.

Sample at Mikkeller Beer Celebration Copenhagen 2017, red session. Aroma is spicy with pickle notes, tart and acetic. Taste follows tart and dry, like pickle juice with dill flavor. Really interesting overall.
