Imperial Stout aged on Defiant whiskey-soaked oak spirals and conditioned further on roasted organic carrots, organic raisins, toasted organic coconut, organic vanilla beans and organic cinnamon.

Sampling a Feb 2018 vintage 750 ml bottle poured into a snifter at cellar temperature. My bottle says 10.2% ABV.

I was warned that the beer may gush a little upon opening, and the cap fizzed and immediately a slow foam oozed over the lip of the bottle, I poured slowly into my glass but still got a billowing 4 cm of beige fluffy head in my glass. I let this recede some and pour another couple ounces into the glass to start the review.
The color of the beer is black coffee and the foam never quite goes away with about .5 cm of densely packed bubbles throughout the sampling.
The aroma on this brew is malty and spicy I get a good hit of coconut and dark chocolate mixing. Also some roasted malt notes and dark fruit, some cinnamon and a little vanilla. I dont get any hop character and the booze is pretty well hidden too. Pretty complex nose on this beer, not sure what the carrot would have smelled like but I dont really find em here.
First sip reveals a lighter body than I would expect for an Imp Stout, with very fine, prickly and active carbonation. The texture is smooth and does stick to my palate a little bit.
Flavor is also very complex, brown sugar, molassses, dark fruit (raisin) are the flavors that hit up front. This moves to some whiskey notes and a bit of vanilla and then also picks up just a bit of cinnamon. The booze is hidden and no hops that I can detect either.
This is a carrot cake brew and it works pretty well without being overly sweet or sugary. Good complexity and hidden booze make this an interesting brew. ONly drawback was the body is thinner than I would prefer, but that may be from the various add-in recipe items. Glad to have tried this tasty brew!

Appearance: Arrives espresso colored with two fingers of beige foam; good retention and splashy lacing

Smell: Modest roast and chocolate with hints of Bourbon-soaked carrot cake

Taste: The carrot cake elements of coconut, raisin, pecan, vanilla, cinnamon come through, particularly as the beer warms with the roast and chocolate being dominant; the Bourbon emerges, after the swallow, and builds in the finish

Mouthfeel: Full bodied with moderate carbonation; warmth in the gullet

Overall: This beer really captures the carrot cake concept; while it is hard to pick up the roasted carrot flavor, let's be honest - it is hard to pick up carrot flavors in carrot cake, too
