This beer has a complex spicy nose with notes of brown sugar and plums. The taste starts with big spicy malt and alcohol moving to fruity in the middle and then an earthy, spicy finish. High complexity reminiscent of something between a dubbel and a quadruppel. Here is what brewer Aaron Inkrott says about this beer:
The inspiration for this beer comes from the traditional French and Belgian farmhouse style ales; Bière de Noel and Saison. The malts used were focused on creating a complex malt backbone, with subtle floral characteristics from the Hersbrucker hops. The yeast is an aromatic Belgian Saison strain that produces complex esters balanced with earthy/spicy notes.

Appearance: Hazy amber brown body is crowned by a massive, dense, and persistent tan head. Volumes of fine minute bubbles surge against the glass walls. The lacing is Belgian-like.
Aroma: Very sweet, with syrupy notes, pronounced phenols, moderate dark fruits, red grapes, and yeast.
Taste: Dark fruits, namely plums and pears, as well as red grapes dominate the taste from start to finish. There is a pronounced undercurrent of spicy alcohol as well, this is notable in the taste from start to finish, and offers a moderate warming presence. Later in the taste, there is a mild black licorice flavor. Finishes with a lingering dark fruit and spicy alcohol flavor.
Mouth feel: Smooth and soft, quite full, with delicate carbonation.
Drinkability/notes: A very nice winter beer, poured as another surge of rainy weather (11.0 inches in the last ten days) storms in.
Presentation: Packaged in a twelve-ounce short brown glass bottle with a twist-off crown, served in a New Belgium Brewing chalice.

I normally don't like wheat beers, but this one is delicious
