Bourbon Barrel Aged Madagascar Vanilla Imperial Stout
Celebrating its tenth vintage in 2024, Fundamental Observation stands as the electric current cornerstone of our brewery. This "liquid brownie batter" was aged exclusively in Heaven Hill bourbon barrels. Each barrel of this milestone vintage saw multiple additions of Madagascar vanilla, ultimately aging with two full pounds of vanilla beans over the course of a year.

Black in color and impenetrable to light. There’s dark brown around the rim. The aroma is of chocolate fudge, vanilla, and bourbon. I’m tasting decadent dark chocolate, vanilla, and bourbon. The mouth is silky smooth especially for the ABV.

Dense black with only a few bubbles. Proper viscous pour, makes me wonder what a 10 looks like, as this is only 7/10 on their meter.
Smell is the usual rich deep bourbon barrel stout, present and strong vanilla. Reminiscent of Nilerzzzz for sure.
Taste follows through. More rich than sweet. Definitely sweet, no bitterness, but definitely somehow just a lot.
Definitely a good beer, not the best for sure.

Fundamental Observation from Bottle Logic Brewing. 16.9 oz bottle from HEB # 45, SAT, TX, 15/11/25. $34.74 (including tax) ($ 2.06/oz). Stored at room temperature in store and at 40 degrees after purchase. Reviewed 14/12/25, review 3657. Note that I use DD/MM/YY protocol.
On bottom of the label “PKGD 07/2025.” Stored at home at 37 degrees F. Served at 57.9 degrees F (Bottle posits serving at 58 F, xin loi) in a hand washed and dried Jester King snifter. The final temperature is 62.2 degrees F.
Appearance – 4.
First pour – Deep Brown, (SRM 30), clear.
Body – Black (SRM 40), opaque. Under direct light, the same. When rear-lite, opaque but ruby brown at the edges.
Head – None. Just a 0.05 cm broken (but constantly renewing) bubble ring and no cap.
Lacing – None.
Aroma – 4 – Smells sweet with some bourbon, cocoa, and vanilla, no alcohol (14% ABV according to the label).
Flavor – 4 – Slightly sweet bourbon with vanilla and a trace of cocoa. No dimethylsulfide or diacetyl. Pleasurable gastric warming.
Palate – 3 – Medium: Slightly syrupy: Soft carbonation.
Style: Follows the BA style description.
Final impression and summation: 3.75 Uncredited label art but standard label for this brewery. Easy drinking if somewhat sweet for the style. One of the rare vanilla beers in which I can actually smell and taste the vanilla. If bourbon tasted this good, I’d routinely drink it. But … generally speaking, I’m slightly disappointed that I didn’t enjoy this beer enough to justify the price point.

2025 release. Poured into a tumbler at 65°. It is ink-black in color and its frothy, medium-mocha head fizzled away almost immediately leaving a large ring. The smell is fantastic: dark chocolate, roasted nuts, vanilla, and soft but noticeable bourbon. The taste follows: sweet cocoa; somewhat bitter vanilla bean, and nutty char, along with a bourbon presence that is a little hot initially but mellows nicely as the Stout breathes in the glass. The flavors are big and bold but blend seamlessly. This Stout has a plush, viscous mouth feel with subdued carbonation, and you can definitely feel the 14% ABV. Overall, Fundamental Observation is a true work of art. It is one of the best BA Stouts I've had in quite awhile.

Had this side-by-side with Goose Island's Bourbon County Brand Vanilla Rye Stout.
Appearance – A very dark black, with a decent dark brown head.
Smell – I smell brownie, vanilla, bourbon, and caramel.
Taste – Follows the nose with brownie, vanilla, bourbon, and caramel. Wonderful!
Feel – Lightly carbonated, smooth as silk, extremely easy drinking.
Overall – I ever so slightly prefer this to the Bourbon County Brand Vanilla Rye Stout. The addition of the brownie flavor just seems to give it a touch more.

Taste – Follows the nose with brownie, vanilla, bourbon, and caramel. Wonderful!
Feel – Lightly carbonated, smooth as silk, extremely easy drinking.
Overall – I ever so slightly prefer this to the Bourbon County Brand Vanilla Rye Stout. The addition of the brownie flavor just seems to give it a touch more.

Poured from a 500ml bottle into a snifter at 57 degrees.
Look- Black, opaque, dark brown creamy head, below average lacing and head retention.
Smell- Bourbon, vanilla, cacao, very high strength of scent.
Taste- Bourbon, cacao, vanilla, high strength of flavor.
Feel- Between medium and full body, slightly below average carbonation, syrup like, moderately bitter, highly mouth warming, moderately mouth coating, moderately creamy.
Overall- Black and opaque with below average lacing and head retention. Bouquet was a super vivid perfectly balanced mix of bourbon, vanilla and cacao. The flavor followed closely to the nose, but didn’t have quite as much intensity. Body was between medium and full with a very syrupy feel. This was complemented by high mouth warming properties and moderate creaminess and mouth coating. Overall this beer was a delightful mix of complexity and balance providing a top notch drinking experience.

Bought at San Diego Wine and Beer. 2022 bottling date consumed 02/07/25. ~27$ for 500 mL bottle. Side by side with Intrepid Observation (2023).
A&S: Medium black beer (not jet black). The head dies quickly, but while it is around it's creamy light brown. No real lacing. The aroma is potent but pretty straightforward. Incredibly fudgy. Brownie batter and vanilla
T&M: Very dark chocolate-forward. Creme breele. Fantastic aftertaste, the finish is really heavy cocoa. As it warms more I get more vanilla. Very dangerous drinking. Brownie batter. Thick and desiccant mouthfeel
Overall: Fantastic beer. I can see why this one is rated so high. My favorite so far out of Bottle Logic. I definitely want to try this beer unaged.
