Notes:
Collaboration with Toppling Goliath Brewing Co.
Monstrous Double Mash Imperial Stout brewed to an exceptionally high gravity and aged in bourbon barrels for eighteen months. This coffee-soaked liquid stains the hull of the glass with leggy 13.37% ABV tentacles.
We've partnered with Mostra Coffee to source and roast an exclusive batch of Panama Geisha, the most precious beans in the world, to use as the singular finishing ingredient on this devastatingly viscous base.
Panama Geisha beans are utterly devoid of bitterness. The varietal’s floral aromatics and delicate flavor notes of honeysuckle, bergamot, peach, and red fruit crest and crash throughout the brew, swirling across the palate with a robust, roasty finish.
Sink into the mysterious fathoms of this titanic stout brewed in collaboration with the legendary team at Toppling Goliath Brewing Co.

500 mL bottle poured into a snifter.
Black with a creamy half inch mocha head
Nose: coffee, bourbon, and vanilla. Tremendous balance, coffee aroma is developed and complex.
Taste: Coffee forward up front followed by a big dose of smooth bourbon and vanilla. The coffee is incredible in this - tons of nuance. No heat on the finish.
Feel: Exceptionally smooth, silky.

Favorite beer of 2020 for me. Full body, huge sweetness from the barrel balanced with a good spirit character. Bitter coffee to round it all out. Top tier BA coffee stout

Very dark appearance with slight tan head that dissipates quickly. Aroma is a slightly sweet busy coconut, berry, and coffee. Taste is also a busy slightly sweet coconut, berry, and coffee. Feel is exceptional.

Tar black with a mocha head that dies quickly to a thin ring. A swirl substantially stains the glass with a brown varnish.
This has a nutty woodiness that verges near hickory territory, as the thickly viscous body accented by a slightly sharp sting of chocolate syrup finishes fairly sticky.
However thickeningly soft its froth is, it still manages to deliver notes of toffee bourbon sauce, caramel, and peanut brittle. There's not really a very forward presence of coffee, per se, but I do get a hint of blackberry at times.
---
If it's worth it to anyone for me to note, after deciding to kill off my second and final bottle instead of trading it, I find this to have improved over time. Umibōzu ahs become less woody already, 4 months after my first review, with not a single aspect of hickory to be found, while also reducing any acrid or bitter qualities I found before.
It's still syrupy smooth, nice and thick, but now has room for tangy vanilla cream ribboned throughout a more classic mocha flavor to come forward. There is also a mild presence of dark fruits I didn't catch before.
I'm not going to adjust my score any, as I still feel like it's an absolute waste to use such rare coffee beans to flavor beer (bolder beans have always been more successful to me in dark beer, and I'm also jealous I've never actually gotten to try Geisha beans on their own), but this should definitely encourage anyone reading this to try this beer now if you haven't already.

Pours an inky black with a small amount of mocha colored head that dissipates quickly. Smells of coffee, chocolate, fudge, and hints of bourbon. Not as much coffee smell as I thought there would be. Despite this being a coffee beer, fudge dominates. I would not say that the coffee isn't present, because it is but not the typical "coffee" taste of other coffee bourbon barrel stouts. Absolute stunning feel. Thick, smooth, and coats the mouth. Absolutely decadent. Overall a stunning beer. The thickness of the beer matches the decadent feel and tastes.

A double-mash stout, the bottle pours a jet black and glugs into the glass like used motor oil. The coffee used is supposedly designed to be devoid of bitterness, but it’s been replaced by the freshly cut green pepper aromas and flavors. The double-mash brewing technique, while providing a deep, rich viscosity, has also really heightened the sweetness factor. It’s actually a bit overwhelming, and makes it difficult to enjoy the coffee. It’s a solid beer, but I was hoping for more.
