a sourdough wild ale, and a really, really cool beer! one of the most unique and adventurous beers i have had in idaho so far, and they seem to do a lot of creative stuff like this. really pale yellow in the glass, hazy, and airy headed like champagne, delicate and high rising, pure white. the sourdough yeast is awesome, doughy and funky, tart but not acidic or bacterial in the traditional sense, and with all the raw wheat in the mash, it really does drink pretty bready and rustic, i love how interesting the grain and the yeast are together, and i definitely get a little bretty character here too, not real mature or anything, but definitely present. a light white wine tannic property too, some lemony notes, and a noble hopped grassiness that makes it even more old worldy on the back end. french saison vinous character is here, soft citrus, fresh herbs, and an amazingly dry finish. its just like sourdough bread in a saison, a brilliant recipe and professional execution. the high carbonation is fantastic, and this really is distinctive and special. a heck of a first beer from these guys for me, i adored this and hope they make it again soon!

Recently ordered four bottles from Tavour. This is a perfect spring/summer beer for me. Sour saison with an assertive, but somehow soft sourness that really works for me. Slightly citrusy but not overly so. I swear I can perceive the quality of sourdough bread in the taste. Some musty funk as it warms.

Draft poured into pint glass; hazy pale straw color, with nice lacing. Faint yeasty aroma. Very sour flavor with bready finish, true to its namesake. Reminiscent of champagne. Tasty and unique!

Heavy effervescent carbonation, love it. Smell is like delicious fresh sourdough. Taste is very sour upfront but doughy in the finish. Spot on. The feel is almost like yeasty champagne. I've had many bombers so far.

Draft at WE taproom. Milky pour, leans towards a sour/wild. Creamy head, tart, lemony aroma. Taste also is quite tart, but a bit of bread, biscuits after the tart blast. A bit tart for a Saison, but underlying body is there.
