Pours a fizzy thin pale cloudy yellow-golden color. Very thin head, no lacing and very low carbonation.

The aroma is very crisp with barnyard funk and lactic notes. Similar to a classic lambic but lighter and with straw, pear and apple undertones. Very crisp.

Taste has a light cider charatcer up front, followed by a subtle metallic tinge and then followed by lactic barnyard tartness and slight funk underneath. Clean and crisp with champagne-like vinous qualities at the end.

Mouthfeel is light and crisp. Pretty soft on the palate; fresh and sweet with dry finish. Drinkability is good, nice and refreshing, but not to any particular style.

From notes in February. On tap at Capones...

Appears a hazy, pale gold with no co2, or head to speak of. I even tried to swirl hard to create a collar but nothing would form. No lacing.
Smell is of apples...perhaps some caramel, and mild spice. Not much of anything else.
Taste is of the mentioned aromas with a touch of wood and vanilla on top of the apple and mild dough flavors.
Mouthfeel is tart, medium bodied, bland, with a thin finish.

I give Flying Fish credit for trying something different. As a homebrewer, I usually don't brew beers that are typical to any particular style. Sometimes experiments work, and sometimes they don't. I think this would be good with a Stille Nacht clone, or even a wheat beer.

A-Golden hued with a thin white head that reduced into light lacing.

S-Green apples and brandy...this one is a no brainer!

T-Tart, dry apples initially then the brandy kicks in and hits you with the sweetness then the aftertaste has a drying affect from the alcohol.

M-Medium-light body with a very nice smoothness. Slightly astringent and tingly.

D-Smooth, a true pleasure. The alcohol is blended very nicely. This is the best product I have ever had from Flying Fish...well done!

Cloudy gold colour with a fine, cream coloured cap. Great head retention with spotty/streaky lacing. Aromas of oak and booze, along with bourbon, meshed well with the fruit character of the beer. Vanilla didn't hurt either. Moderate bitterness with caramel maltiness and fruity notes. Slight booze with a bit of oak and cider. Sweetness really lingered. Medium to full bodied with carbonation on the high side. It had a dry astringency that detracted somewhat from the mouthfeel. Overall, good stuff.

Enjoyed at Capones.

Poured a hazy golden yellow color with tiny white head and spotty lacing. Smells of apples, cinnamon, vanilla, and bread. Tastes of pepper, clove, bread, apples, and spicy hops with a slight alcohol presence. Medium in body, low in carbonation, smooth yet tart with a crisp hop finish. A nice mixture of fruity flavors and a tripel

Nice golden colored beer. Had at a Capone's event, which served this one in a 9 oz tulip. Came with nice white head and eventual lacing. Not heavily carbonated though. Mouthfeel was pretty smooth.

The taste is exceptional. Apple from the barrel. Sweet and slightly sour, but not in a lambic sort of way. This tasted like an apple Jolly Rancher which is quite alright by me.

Casey, of Flying Fish, is to be highly commended for his experimentation. I hope he does this particular beer more often.
