An imperial stout aged for 4 months on Siesta Key Spiced Rum barrels as part of an ongoing collaboration between Jdubs and Drum Circle Distilling. These barrels previously held "Esperanza", our first beer of the series, as well as a beer barrel rum that took "best in class" in an international competition in Miami. San Cristobal was made with large amounts of roasted barley, and other dark malts that blend harmoniously together with the sweet candy notes of the rum. Puréed cherries were added during the fermentation process to produce another fine ale, worthy of the series.

750 mL bottle. Black body. Strong rum and roasted malt. Milk chocolate. Kinda fudgy. Tastes of milk chocolate. A little less depth than the aroma. Heavy oak and roasted malt in the finish. Rum aftertaste. Heavy and boozy. Not a cherry flavor to be found, despite what the bottle says.

750ml brown bottle, sample from the brewery.
Thin tan lacing, black as night. Sweet confection, almost candied coconut nose w/ some faint roasted tones and booze. Carbonation is extremely light though the creaminess does not need a lot here, full semi-syrupy body. Semi-sweet maltiness, mellow but warming rum barrel character with suggestions of nougat and a ghost-like coconut. Warmth from the booze comes in more in the finish but its never hot.
A very enjoyable sipper. One of the best brews I've tried in 2015.
