a honey based wild biere de garde, an awfully expensive bottle of beer, this one from 2016, but interesting enough to make me feel good about it, although i wish i had it when it was brand new, feeling like the sourness probably ate into the honey some here, and that the darker grains may have faded some, but still something insanely unique here. it has a deep amber to mahogany color, a decent tan head, but some cloudiness and visible sediment as well. i like the flanders type vinegar profile to the fermentation, not overly sour but definitely with some pucker. dried cherry or cranberry sourness, some nice mature funk too, a caramel malt richness, some wood it seems too, and some honey character, but with the darker grain its almost more like molasses when i taste it. the honey still has a lot of character, but the sourness does break it down a bit. nuts and honey, funk and red wine, some sharpness and some leftover sweet too, bran muffin and raisin and date, complex but not overly drinkable, feels thick and the booziness is high too for what it is, intense as it warms up. i have never had a beer with this flavor profile, so in that respect i liked it a lot, but for almost 30 bucks a bottle, im not sure i would come back to this one anytime soon, unless its super fresh for the sake of comparison...
