Disco Pig #2: Brett Golden SourDisco Pig #2: Brett Golden Sour
Notes: Brett Golden Sour. This beer had a long weekend in our brew kettle allowing beer bugs (Pediococcus and Latcobacillus) to get down get down and do their sour thang. While yeast strains eat sugar and produce alcohol beer bugs eat sugar and produce acids. This gives sour beers their puckering power. After letting the bugs play in the sweet wort pool we boil the beer and add a touch of earthy hops. Disco Pig #2 Brett Golden Sour is 100% Brett fermented to replicate as closely as possible what a traditional Belgian wild fermented sour beer should be!

Bottled recently, so a new run of #2? Seems like they improved it based on the previous ratings and reviews....

L: Pours a medium amber with a two-finger fine white head that quickly recedes to a 1 to 2 mm ring around the perimeter of the glass and is retained as the beer is drained from the glass.

S: I get white raisin mixed with barnyard funk, and earth. There are light notes of oak, tobacco, and molasses.

T: Following the nose closely, I get white raisins and funk on the front end that flow into the middle of the palate where they encounter heavier funk and earth that quickly turn sour. On the back end of the palate sour earth continues into light notes of oak, molasses, and white raisin (making an encore).

F: The beer has a light effervescent body with a medium to medium-high attenuation leading to a decently dry finish which balances out the sourness. There is a low to low-medium carbonation.

O: This is a very complex beer that nicely balances out all it's elements. This is an excellent example of a Brett that I would highly recommend.

Low carb. Hint of white wine. Lot of malt sweetness. Minimal tartness. This beer doesn't really fit the description or the style. The malt level is out of balance and the yeast hasn't developed despite extended aging.

Brett Golden Sour, bottle #446 out of 928. This is a ton better than the Braggot but still overall pretty weak. Getting hints of raspberry, lemon, grape must and a tiny bit of Brett funk. Some oak. Somewhat tart, not sour. Subtle. This is OK.

Bottle. Pours golden with a medium sized head. Aroma is immediately quite funky and Bretty. It also has a good dosage of tartness. I do detect a little sweetness as well so I don't think this beer is going to be an absolute sour-trip. The flavor is akin to the nose. It starts off with some tart lacto elements and a medicinal-yet-fruity Brettanomyces. Then there is a modest sweetness that softens out the acidity on the feel of this beer. Medium bodied with a lingering aftertaste. My first offering from Black Hog. I found it enjoyable.
