Tempus is an old world sour saison brewed & blended using the production processes of yesteryear. No two blends will taste exactly the same. Tempus is a blend using anywhere from 30 to 50% oak aged saisons and lambic style ale, blended with young ale lagered in barrels.

Tempus 2017
Poured from a bottle (06Jan2017) into a stemmed Suarez glass
L: pours a glowing, moderately turbid golden orange. Minimal white head, right ring of large bubbled foam at the edge (you know what I mean). Visible carbonation, call it light
S: oh this is so, so nice. Great mix of fruit with some earthy funk. Light lemon flesh, granny smith apples, peach, Chardonnay. Slight cheese, little tart, tea - cheesy funk building as it warms in the glass. Really balanced nose - tons of complexity without being too in your face. Acidity is on point
T: it’s divine, truly. A really elegant balance of fruit and aged funk, with amazing acidity that builds through the finish. Notes from the nose all present: peach, Chardonnay, Granny Smith, bit of tea, building cheesy funk. The acidity is great - slowly builds through to the finish. I really can’t think of anything I would want different in this sip
F: low+ carbonation, medium+ body. It’s my only knock on this beer - the mouthfeel is a little viscous, but that either mellows out as it’s warmed or I get used to it. Not a deal breaker by any means, but I’m focusing on the small stuff as overall this is incredible
O: one of the best brews I’ve had in a long time, world class without a doubt

Lucky blend 13, bottled 8/13/20
This bottle was absolutely calling my name at OEC the other day. Despite not being a hige saison fan, I was assured this one is quite different. Let’s crack it open
Pours a cloudy golden orange with a finger of short lived fizzy white head that fades to a thin ring and leaves minimal lacing
This smells very funky, I pick up notes of wet hay, leather, tart lemon, dry earthy oak, apple skin, red wine vinegar, and white grape. There’s a floral character I can’t quite put my finger on. Maybe some chamomile?
The front end of the sip brings notes of tart green apple, lemon, honey, and a mineral funk. The swallow makes things way more interesting, with flavors of tart lemon and white grape exploding immediately, leathery funk, cherries, sharp oak, and just a touch of sweet crisp malt. Highly complex, but highly delicious
A medium body pairs with gentle prickly carbonation which allows this to go down easy, despite the body being thick for the abv. It finishes a touch sticky though, just a tad too much going on to keep it dry
Well, I haven’t had many, but this is absolutely my favorite saison ever. It was a real treat to drink this, and I’d love to have it again and see how the other blends compare

This one is actually pretty similar, but that funk in the nose is even stronger, very mineral heavy. Tastes the same but finishes a tad drier. Still fantastic stuff

Blend #11.
This one pours a slightly golden amber color, with a small head, and not much lacing.
This one smells like lemon peel, oak, white wine, vinegar, grape skin, just about rotting fruit, cobwebby funk, old basement, and citrus.
This is intensely sour and funky, with loads of barrel. There's tons of sour and funky white wine, old cheese, really, really ripe and nearly gone fruit, with oak, old lemons, Grandpa's basement, breadiness, clementines, and stone fruit.
This is light bodied, with a slightly vinegary and lingering tartness on the back end, and a pretty good drinkability.

Pours a hazy golden. Some funk, hay, lambicy aromas. There's great restraint in the acidity in this. It is tart, tangy, and refreshing. This is world class and I would drink a ton of this. It is a contender for the best beer I've had this year.

Saturated gold, ample foam, lasting collar of lace. Minerally aroma, white grape, honey, fresh oak barrel. Tart white grape, gooseberry, clover honey, grippy tannins. Medium bodied, pleasant feel, light carbonation, dry finish. Overall, this is a nice and cohesive blend. Characterful and unique. Thanks Thomas!

Sulfuric and very acidic, some acetic acid present, also some lychee, lemon and oak that work well together. Fruitiness reminds me of the old 22’s of Le Terroir, which was Mosaic dry-hopped.
