Notes: Albus is our historic interpretation of a Belgian white ale brewed with copious amounts of malted & unmalted wheat along with ginger root, chamomile and lemon balm. It is fermented using saccharomyces and lactobaccilus.

Albus Singularis is a special edition matured in an oak barrel. Batch #1 was matured for over 4 months in a Ransom Spirits Pinot Noir/Gin barrel.

Growler. Poured a hazy, pale yellow color. Sample pour so I won't speculate on the head...and I really don't care all that much. Smells tart and funkified. Sour, almost combustible wheatiness warning me. It's not necessarily intense when I smell it but I can sense the impending wackiness. This was in a gin/Pinot Noir barrel? That confuses me; it's one barrel that held gin and Pinot Noir? Pretty zany. It's like some wheat malt was experimented upon a la The Hulk and irradiated into a tart, impressive beast. Very funky, tart, and sour. Puts the senses on full alert. Lemons, wood, herbs, and lacto-wheat. I definitely couldn't pick out any of the gin or wine influence but after knowing where it had lain, I suppose it does have a vinous, gin-herb flavor. Tart but refreshing in a strange way.vlight bodied. Burrowing carbonation. I am not always into this sort of sour/barrel concoction but this one was simply enjoyable. Opened my eyes.

Tart, lemon, minerally. Maybe some botanicals on the back end. Pinot barrels not really present, but maybe it is, who knows. Everything seems very well integrated. Solid.

A- Hazy straw yellow body, two finger white head, nice retention time in the glass, thin collar, not much lacing.

S- Crisp lemon zest, oak, juniper, tart lactobacillus, minerals, bread. Quite tart and complex. Not much of that distinctive Belgian yeast strain due to all of the other components.

F- Lemon zest, wheat, musty oak, dry juniper, lacto, mineral crackery sweetness. A little bit more of the Belgian yeast spice flavours come out here rather than in the nose.

M- Medium bodied, nice effervescence. Not difficult to drink. Good carbonation, refreshing.

O- Very complex flavour profile in a witbier. Tasty, easy to drink and refreshing.

Really impressive. You can appreciate the witbier body. Good lacing. Slight gin nose. Quenching tartness and super dry. Smoothness throughout which leads to extended drinking.
