Notes:
Mistral is a dry hopped Pilsner brewed with authentic Czech Pilsner malt using a traditional decoction mash. During the boil it is hopped using French Mistral & Strisselspalt. After the boil it rests in our copper coolship for 1 hour and is then transferred over our baudelot cooler. It undergoes a cool open fermentation for 9 days using a classic pilsner yeast. Finally it is dry hopped using French Mistral prior to packaging.

The mildly foggy burnt straw body builds an off-white foam head of moderate height that condenses to a quite thick and lumpy comforter that retains well and leaves a few small clouds of lace on the glass.
Toasted seedy cracker and corns with floral and herbal hops and green grape skin all come together quite well, though that grape character emerges a little more with time to make it a hair sweeter than I'd expect.
The medium round body has a fine crispness that only crops up late in the semi-dry swallow.
